About the winery De Toren Private Cellar
De Toren Private Cellar was founded in the early 1990s by Emil and Sonette den Dulk in the Polkadraai Hills, just outside Stellenbosch in the Western Cape. The tower that rises above the cellar symbolizes the gravity-fed winemaking system employed by the estate. Situated between 200 and 400 meters above sea level and constantly cooled by the ocean, the vineyards enjoy ideal conditions. Warm days and cool nights ensure optimal ripening and natural balance. The soils consist of weathered granite and clay with excellent drainage. This makes De Toren's wines full-bodied, complex, yet elegant.
The winery built its reputation on Bordeaux-style blends, but also produces exclusive single-varietal wines of exceptional quality. The Patronus Malbec is among the estate's finest and is produced in very limited quantities.

The 2021 Patronus wine – grapes, harvest and vinification
The Toren Patronus 2021 is made entirely from hand-harvested Malbec grapes. The bunches were rigorously selected, and only the perfectly ripe berries were used. Fermentation took place under controlled temperatures to preserve the fruit aromas and make the tannins velvety smooth. The wine was then aged for 18 months in French oak barrels, some of which were new, to add depth and complexity without overpowering the fruit.

Boasting ripe, dark red fruit tones, the 2018 Z is focused with a frame of oak before swaying with red and purple flowers and ripe, dusty plum. Medium to full-bodied, the mostly Merlot blend shows an expressive and elegant frame with soft herbal essences, juicy and succulent black cherries and subtle herbal notes of sage. It ends with a broad and tannic edge on the long-lingering finish. I'm going back for seconds. It's a well-made, delicious wine. Give it a try.

Historie en ligging
De Toren ontstond begin jaren 90 toen Emil en Sonette den Dulk hun drukke leven in Johannesburg verruilden voor een droom tussen de wijngaarden van Stellenbosch. Ze vonden hun plek op de heuvels van Polkadraai, met uitzicht op False Bay en Table Mountain. Die ligging bleek goud waard: de koele zeewind temt de hitte, waardoor de druiven langzaam rijpen en meer diepte krijgen. De eerste wijn verscheen in 1999 en zette het domein meteen op de kaart als serieuze speler in de wereld van Zuid-Afrikaanse Bordeaux-blends.
Druivenrassen en wijngaard
De Toren richt zich volledig op rode druiven. In de wijngaarden groeien Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec en Petit Verdot. Klassieke Bordeaux-variëteiten dus, maar met een Zuid-Afrikaanse twist. De stokken staan op vijftien verschillende bodemsoorten, elk zorgvuldig gekoppeld aan de juiste druif. De hoogte ligt rond de 200 meter en de bodem is arm, waardoor de wijnstokken diep wortelen en geconcentreerde druiven geven. Alles wordt met de hand geoogst in de vroege ochtend, druif voor druif gecontroleerd, en vervolgens met zwaartekracht verwerkt zodat er geen pomp aan te pas komt.
Specialiteiten van De Toren
De bekendste wijn is Fusion V, een blend van de vijf Bordeaux-druiven. Elegant, gestructureerd en inmiddels een klassieker.
