Château Ausone is among the absolute top estates in Saint-Émilion and has been considered one of Bordeaux's most iconic estates for decades. The château is situated on a steep slope with pure limestone soils, just outside the historic center of Saint-Émilion. Under the Vauthier family's guidance, the estate is cultivated with great precision, with a strong focus on terroir expression, low yields, and long maturation. Ausone is known for its understated power, finesse, and exceptional cellaring potential.

Vinification was carried out with great precision, focused on preserving purity and tension. The wine was aged in approximately 90% new oak barrels, primarily Demptos and Taransaud, with multiple rackings to enhance structure and integration.

This wine is offered in a magnum format. Due to the larger bottle size, the wine develops more slowly and evenly than in a standard bottle. This results in a more refined tannin structure, better integration of the oak, and a significantly longer drinking window. For a wine with Ausone's potential, the magnum is ideally suited for extended cellar aging. This is a 1.5-liter magnum in OWC/1.
Color, smell and taste
In the glass, the wine displays a deep ruby red color. The aroma is complex and layered, with aromas of red and dark berries, cherry, and plum, complemented by floral notes of iris and rose petal, spices, mint, and subtle woody notes.

The 2021 Ausone was the fruit of a challenging growing season, the estate's second year in organic conversion coinciding with notable diseases pressure, but the resulting blend of 65% Cabernet Franc and 35% Merlot (featuring a touch more Cabernet Franc than normal) was one of the most seductive wines of the en primeur campaign, its exotic perfume and crystalline purity evoking the great Ausone vintages of yesteryear and offering an unvarnished representation of this superb limestone terroir. In bottle, the 2021 remains an excellent wine, but at least out of the gates, its élevage (in 90% new oak, predominantly from Demptos and Taransaud, with four rackings) has taken the lead, intermingling aromas of vanilla, spices and toast with discreet notes of minty dark berries, cherries, petals and pencil shavings. On the palate, it's medium to full-bodied, layered and fleshy, with an ample and enveloping core of fruit that retains its energy and purity but which gives way to a finish marked by somewhat assertive barrel tannins. Given the inherent quality of the wine and the terroir, I'm sure time will be kind to it, but I'm not quite sure it will ever realize the magical potential it showed in April 2022.

On the nose, this refined and silky wine shows violets, raspberries, blackcurrants and crushed stone. Medium-bodied, with cocoa and sandalwood. The center palate is deep and flavorful, solid fruit and a wonderful texture going long and horizontal. It makes you smile. Drinkable now but better in a year or two.

The 2021 Ausone has quite an intense bouquet, with subtle floral scents of iris and violet that percolate through the black fruit. The oak here is very well integrated, and there is just a faint touch of licorice and clove. The palate is medium-bodied with fine-grained tannins, very fresh and tensile, like the Chapelle d'Ausone, exhibiting a captivating citrus/blood orange sorbet note toward the finish that lingers in the mouth. This is a very composed Ausone that will give 20-30 years of drinking pleasure…if you allow it. Incidentally, this is 12.8% alcohol, less than in recent vintages.

The 2021 Ausone is a gorgeous wine, but it is also quite reticent and in need of time to come around. The operative word here is balance, as all the elements are so well put together. Soft, gentle contours wrap around a core of succulent red/purplish fruit, blood orange, spice, lavender, rose petal and dried herbs. The 2021 is compelling.

From: 2021 Bordeaux En Primeur: Back to Classicism (May 2022)
The 2021 Ausone could turn out to be one of the wines of the vintage on the Right Bank. It shows terrific balance, with just enough mid-palate sweetness and texture to fill out the layers. To be sure the 2021 is an understated Ausone, but all the elements are so nicely balanced. Red/purplish berry fruit, pomegranate, spice and mocha are pushed forward. The blend is 60% Cabernet Franc and 40% Merlot, with the Merlot more in evidence today while the Franc is felt mostly in the wine's finish. Rose petal, cinnamon and blood orange add an exotic flourish.

This year's tasting at Ausone consisted of just three wines: La Clotte, Chapelle d'Ausone and Ausone. The Vauthier family endured a brutal year in which frost and mildew wiped out 80-90% of the production at Fonbel, Simard, Haut-Simard and St. Georges. Those wines will be presented only as finished, bottled wines. Yields at La Clotte and Ausone were down much less, on the order of 20% or so. “We farm biodynamically out of a sense of conviction, because we think it is the right thing to do,” Pauline Vauthier told me. “But losing a large part of the harvest is very difficult. If we have another year like 2021, we might seriously reconsider some of our choices.”

The 2021 Ausone was picked on September 30 for the Merlot and October 4–6 for the Cabernet Franc, with a higher percentage of Cabernet Franc because some of the Merlot was deselected into the Chapelle. Matured in 90% new oak, this has a fragrant and floral bouquet, more iris than violet, revealing a hint of seaweed in the background. The palate is well-defined, quite strict and focused, certainly one of the more mineral-driven Ausones that I have encountered at this stage. The limestone terroir is evident on the finish. Again, this is a little leaner and less flamboyant than recent vintages. Having tasted Ausone at this prenatal stage for over 20 years, I don’t find the thrilling "drive” or the pyrotechnics of the 2001, 2010, 2016 or 2019. Yet this Ausone is compelling in its own uncompromising way, and I wouldn't want it any different.

History of Château Ausone
The history of Château Ausone goes back to Roman times. The estate is named after Ausonius, a Roman poet and statesman who owned the property in the 4th century AD. Ausonius is known for his work 'Mosella', a Latin poem describing the Moselle River and its surroundings. The building's association with this prominent figure adds to its historical significance. The estate was built on throughout the Middle Ages, with various owners overseeing its development. During this period, viticulture and winemaking practices evolved in the region, paving the way for Bordeaux to become one of the world's most sought-after wine-producing areas.
In the 16th century the building came into the hands of the Chatonnet family. In the 18th century, Château Ausone saw a significant expansion of its vineyards. During this period the estate's reputation grew and it became recognized as one of the most important estates in Saint-Émilion. The modern era of Château Ausone is closely linked to the Vauthier family. In 1997, Alain Vauthier took over the estate, and his daughter, Pauline Vauthier, later took over management with him. The Vauthier family's tenure brought a renewed focus on quality, precision and sustainable viticulture. Their commitment to excellence has contributed to Château Ausone's continued success in producing exceptional wines.
Production and terroir of Château Ausone
The vineyards of Château Ausone are located on the limestone plateau of Saint-Émilion, known for producing wines with exceptional finesse and aging potential. The estate's vineyard is relatively small in size, but is planted with a mix of grape varieties. Merlot and Cabernet Franc are the main grapes, with a higher percentage of Cabernet Franc in the blend, contributing to the unique character of Ausone's wines. The limestone soil and southern slopes of the vineyard play a crucial role in the production of high quality grapes. Château Ausone is known for its commitment to quality and meticulous vinification. The vineyards are carefully maintained and the grapes are harvested by hand to ensure the best possible fruit quality. The winemaking process involves a combination of traditional and modern techniques. The wines are typically aged in new French oak barrels to improve complexity and structure. Château Ausone produces only a limited amount of wine each year due to the small size of the vineyard. The Grand Vin, simply called Château Ausone, is considered one of the most exceptional and rare wines in Bordeaux.
