Château Astruc, at the foot of the Pyrenees, consists of 50 hectares, 25 of which are planted in the Limoux appellation. This is a unique terroir, very different from the rest of the Languedoc, where different climatic influences come together, the Mediterranean and the Oceanic being the main ones. On the hills of the Aude Valley, Chardonnay is king, but red grape varieties are also important: Pinot Noir, Cabernet Sauvignon, Cabernet Franc, Merlot and Malbec.

The Teramas Astruc comes from the Appelation Limoux and is a blend of 55% Merlot, 25% Syrah and 20% Cabernet Sauvignon. The vineyard is around 25 years old and is located on a limestone and chalk-like gravel soil. Age of the vineyard: 25 years old. Harvesting is done manually and, as is customary at Paul Mas, they do this at night and very early in the morning so that the fruit remains fresh and does not ferment and oxidize prematurely. The grapes are destemmed and each grape variety is vinified separately. Fermentation takes place at 25 ° C 10 days of maceration for the Cabernet, 12 days for Merlot, 12 days for Syrah under temperature control (maximum 28 ° C). The blend is made by Jean Claude in November. 60% of the mixture has matured for 8 months in oak barrels (60% American oak, 40% French). The remaining 40% matures in stainless steel barrels.

In the glass, the Teramas Astruc Rouge AOC Limoux is deep purple with ruby red tones. On the nose, the Teramas is elegant and complex with plum aromas, red berries and roasted notes. Intense aromas of ripe black fruit, coffee combined with sweet spices. In the mouth the wine is well balanced, round, silky with soft tannins. As we often advise, do not drink this wine too warm. Best served at 15/17 ° C. A delicious glass that is a good accompaniment to red meat, game, terrines. Also delicious with a full meat and cheese board.

Jean Astruc, coachman in Limoux, has a dream: his own wine estate. The dream came true in 1862, with the acquisition of 12 hectares of vineyard in Malras. His son Jean Astruc has the same ideal and continues to acquire land despite the crisis and his departure to the battlefields of the First World War. In the 1950s, his son Pierre inherited the Domaine Astruc. It then includes over 30 hectares of vineyard and the resources to exploit it. In 1977, after completing his studies, Pierre's son, Jacques Astruc, returned to Malras to continue building the Domaine Astruc with his father.

Characteristics:

The Domaine Astruc has continued to grow since then and has been turned into a modern winery, which presses the grapes from over 400 hectares of vineyard, harvested by about a hundred farmers. Annual production is 21,000 hectoliters. Jean-Claude Mas enters the picture in 2003: owner and winemaker of Les Domaines Paul Mas, a successful and independent family business in Pezenas, also in Languedoc. He had long worked with Astruc - the main source of their Vin de Pays wines - and decided to buy the Domaine. The d'A series is the first fruit of this purchase.
