The Mestres Coquet has a straw-yellow color with greenish reflections and a beautiful perlage. Very refined and beautifully integrated bubbles. This Mestres Coquet is a very elegant Cava with aromatic richness. On the nose, notes of white fruit, apple, citrus, and orange peel. On the palate, the freshness of the fruit stands out, accompanied by notes of aging and maturity. It is a Cava that fits easily at any moment of the meal. The Coquet is a blend of Macabeu (30%), Xarel·lo (45%), and Parellada (25%) from a vineyard over 50 years old. The Mestres Coquet Gran Reserva Brut Nature is, as a Brut Nature should be, very dry with less than 1.5 grams of residual sugar. Mestres is known for its long aging, and the Coquet is also a Gran Reserva with more than 42 months of aging.
100% of the sparkling wines from Mestres are aged in the bottle under cork, meaning two natural corks are used for aging. Mestres is a very traditional Cava producer and is compared in style to the "López de Heredia & Tondonia" of Cavas. This is a so-called Vintage Cava, which means that it is produced from a single year, and only in good years.
FUN FACT: Mestres has always printed the disgorgement date on the label, and Mestres is one of the few houses that opts for the traditional aging method and is the godfather of "Long Aged Cava". 1. Smoked salmon with crème fraîche and dill on toast
The briny and creamy flavors of smoked salmon are beautifully balanced by the fresh acidity of the Cava. The fine mousse cuts through the fat of the salmon and the creaminess of the crème fraîche, while the brioche notes in the wine enhance the toasted bread roll.
2. Grilled green asparagus with Parmesan
Green asparagus calls for a wine with fresh acidity and subtle bitterness. The Cava complements this perfectly, while the savory, umami-rich Parmesan forms a bridge to the slightly oxidative notes of the long aging.
3. Oven-baked chicken thigh fillet with lemon and thyme
The juicy, tender meat of the chicken thigh is refreshed by the lively acidity of the Cava. The lemon enhances the citrus character of the wine, and the herbaceous notes of the thyme complement the complexity of the Gran Reserva.
4. Shrimp tempura with lime mayonnaise
The crispy texture of the tempura pairs well with the fine bubbles of the Cava. At the same time, the lime mayonnaise provides a fresh accent that beautifully complements the wine, while the whole remains light, so that the purity of the wine is preserved.
5. Tortilla with potato, onion, and aioli
A classic Spanish tortilla pairs seamlessly with this Cava from Penedès. The savory notes of potato and egg combine with the brioche and yeast tones, while the garlicky aioli is refreshed and balanced by the acidity.
6. Veal tartare with truffle oil and finely chopped green apple
An elegant combination in which the juiciness and freshness of the apple provide a contrast to the tender veal. The truffle oil, on the other hand, brings out the ripe, nutty nuances of the Cava, making the whole layered and exciting.

The MESTRES family has been documented in Sant Sadurní d'Anoia since 1312 as owners of vineyards and also as traders of grains and wines. The family has been connected to the wine world for 29 generations. At the time, the date of 1312 was taken as the year of the founding of the MESTRES vineyards.
During Christmas 1928, the first bottle of Cava MESTRES was released, produced by Josep Mestres Manobens using grapes from the 1925 vintage. From this date, the family specialized in the production of sparkling wines with very long aging, made in the Champagne style, namely the traditional method. Since then, they have focused exclusively on superior quality, and MESTRES has grown into a reference and benchmark for top Cavas. Josep Mestres Manobens is the one who started by taking a high-quality base wine and using the 'champagne' method ('méthode Champenoise') to make a Cava without the addition of a sugar liquid (this is used for extra fermentation by most houses), which he named "Visol" (WINE ON ITS OWN). At Mestres, they work only with wine and no additives. This is how the first Brut Nature was born and has been registered with the Patent and Trademark Office since 1948. Mestres are therefore the parents of Brut Nature. Today, the 29th generation of the MESTRES family follows the path of their predecessors and maintains that restless and enterprising spirit that characterized the MESTRES family, a winery with seven centuries of history.

The 2020 Coquet Gran Reserva Brut Nature is their youngest and most approachable wine. It combines grapes (Xarel.lo, Macabeo and Parellada) from their own vineyards with purchased ones but is produced with the same care as the rest of the range. It was fermented and kept in stainless steel and refermented in bottle with an élevage sur lie of 42 to 48 months, also closed with natural cork. It's super clean, harmonious and precise, balanced and elegant, serious and fresh, with abundant small bubbles. 87,080 bottles produced. The bottle I tasted had been disgorged in November 2024.
Mestres is one of the most traditional Cava producers, aging their wines under cork and hand-disgorging the bottles. They are relatively small. The production is 175,000 bottles per year, and they specialize in long aging and large bottle formats. They focus pretty much on the high end segment and the haute cuisine restaurants.

Due to the double natural cork and the long aging, the Cava's are in style with the white Tondonia Wines. Luis Guiterez of Parker writes "Mestres are a kind of Lopez de Heredia of Cava" Together with Recaredo, Mestres is without doubt the Specialist in Long Aged Cava's in which their top models are more than 30 years old before they can leave the impressive cellar and we have even been able to taste wines over 60 years old and these are still very much alive and spit out of the glass.
During all these years we have been able to follow the tradition and respect a philosophy of unique elaboration, bringing the name MESTRES and the word CAVA to excellence. Mestres is the living history of Cava. Today, MESTRES' Cavas all have very high ratings.
