Description
The Prosper Maufoux Bourgogne Hautes-Côtes de Beaune comes from the Hautes-Côtes de Beaune appellation. The total of all vineyards of the Hautes-Côtes de Beaune cover approximately 800 hectares, spread over 30 communes. The terroir, in particular the climate, differs from the higher altitude of the vineyards, from 280 to 550 m, which leads to precise wines whose character is increasingly sought after.
Immediately after the manual harvest, the grapes are sorted, destemmed and then gently transported on a belt into the vat, without pumping. Before fermentation, a cold maceration is carried out at 10°C for 4 to 5 days. The alcoholic fermentation lasts between 18 and 20 days with daily immersion. The wine is then put into barrels and vats, and the malolactic fermentation is carried out completely. The wine ages for 10 months in stainless steel tanks and oak barrels, of which 20% are new oak barrels
The Prosper Maufoux Hautes Côtes de Beaune has a pale golden colour. It reveals aromas of citrus fruits, candied fruits and floral notes. In the mouth it is greedy and powerful, with subtle woody and mineral accents typical of the partial maturation in barrels. The finish has a nice acidity and liveliness. Delicious with fried cod with spicy chili.

Prosper Maufoux was founded by its name bearer in 1860 in Santenay, in the south of the Côte d'Or, where it remained in the hands of the Maufoux family for almost a century and a half in 1994. In 1860, Prosper Maufoux, a notary by profession, left his office to devote himself to his passion for wine. He founded his own house in Santenay, a Burgundian village in the south of the Côte d'Or, in the heart of the vineyards. His son Cyprien looked beyond the borders and brought Prosper Maufoux wines to the tables of England, the Netherlands, and the United States. He created a culture of openness to the world at home. The takeover in 2010 by Eric Piffaut resulted in significant investments in the winery, which resulted in a huge increase in quality. Prosper Maufoux is currently housed in the Château de Saint-Aubin, where there is plenty of room to guarantee the qualities achieved for the future. Towards the great growth in the south of the Côte de Beaune, in the heart of the Côte des Blancs, between Chassagne and Puligny, and the immediate vicinity of Montrachet.

The wines are aged in oak barrels whose age, origin, and toast are carefully combined and adapted to the origin of the grapes and the vintage. They rest for 12 to 18 months in the vaulted cellars; an environment most conducive to development. The care taken at every stage of production is regularly rewarded with numerous medals and awards. The exceptional vineyards of Maison Prosper Maufoux extend into the mythical terroirs of the Côte de Beaune: Saint-Aubin, Meursault, Puligny-Montrachet and Chassagne-Montrachet. The family domain also extends to the Côte de Nuits, the Côte Châlonnaise and the Mâconnais.
