Domaine Joannès Violot-Guillemard is a historic family estate from Pommard that has been a fixture of the Côte de Beaune for generations. The family owns vineyards in various prestigious appellations and is known for its classic Burgundian style, where the terroir always takes center stage. Low yields, manual harvesting, and careful aging in French oak barrels result in wines of finesse, depth, and excellent aging potential. Each cuvée reflects the unique character of its climat. Origin and terroir

Clos des Mouches is one of the most famous Premier Cru vineyards in Beaune and has enjoyed an exceptional reputation for both red and white Burgundy for many years. The calcareous clay soil, mixed with stones and gravel, ensures excellent drainage and gives the Chardonnay a characteristic combination of power and refinement. The southeast exposure ensures optimal ripening, while the relatively high altitude retains sufficient freshness. This results in white wines with great tension, minerality, and excellent aging potential.

Grapes and vineyard management

This Premier Cru is made from 100% Chardonnay. The grapes come from carefully maintained plots within Clos des Mouches and are harvested entirely by hand. Thanks to low yields and meticulous selection, only the best fruit reaches the cellar. Sustainable vineyard management ensures that the natural balance between ripeness, freshness, and terroir expression is preserved.

Vinification and aging

After gentle pressing, the must ferments largely in French oak barriques. Subsequently, the wine ages for approximately twelve months on its fine lees, with some of the barrels being new and the remainder consisting of previously used barriques. This sur lie aging provides extra complexity, creaminess, and length, while the subtle influence of the wood supports the refined style of the Chardonnay without overpowering the minerality.

Color, smell and taste

The wine has a bright golden-yellow color with light green reflections. The nose opens with aromas of ripe citrus, white peach, yellow apple, and pear, followed by acacia blossom, brioche, roasted hazelnuts, and a subtle touch of butter and vanilla. Additionally, chalky minerality and a light flinty nuance provide extra depth. On the palate, the wine is rich and velvety, yet simultaneously lively and refined. The fresh acidity adds tension to the ripe fruit and leads to a long, elegant, and mineral-driven finish.

Style and character

Clos des Mouches Blanc is one of the most complete white Premier Crus of Beaune. The wine combines the richness for which Meursault is known with the refinement and tension of the best terroirs of Beaune. It is already harmonious when young, but with a few years of bottle aging it develops extra complexity with notes of honey, roasted nuts, and truffle.

Volume

The 2020 vintage in the Côte de Beaune yielded healthy grapes with high aromatic concentration and excellent natural freshness. As a result, this Premier Cru possesses both power and elegance. The alcohol content is approximately 13.5%. The expected drinking window runs from 2024 to 2038, during which the wine will continue to develop positively over many years.

Food and wine pairings

This white Premier Cru comes into its own beautifully with lobster, scallops, turbot, sole, roast chicken with morels, veal in a creamy sauce, and mushroom risotto. Aged Comté, Beaufort, and other hard cheeses also make excellent accompaniments to this rich yet refined Chardonnay.
