Description
In the glass, the Baumard Savennières Clos du Papillon is a very light golden yellow in colour with a hint of grey. Complex and expressive nose, with a surprising, creamy and almost toffee-like undertone, typical of the combination of ripe chenin blanc + minerality of the Savennières terroir. Appearances can be deceiving, this wine has not been aged in wood! After some airing, the fruit aromas are released, with apple, pear and quince in the leading role, supported by subtle nuances of honey. On the tongue it is a very pure, fresh, mineral, fleshy, round and softly fruity wine. Impressive, mineral finish.
The fully ripe and healthy grapes are harvested manually between 20 September and 11 November in multiple picking sessions. After careful transport to the wine cellars, the undamaged and healthy grapes are pneumatically pressed. The alcoholic fermentation continues at not too high temperatures and slowly until all the sugars have fermented. Savennières is a dry, aromatic white wine. This wine strengthens and refines the taste of the dishes. Surprising with sushi and sashimi (careful with ginger and wasabi) and lightly smoked salmon. Delicious with thin slices of raw scallops with oscietra caviar and oyster leaf or oyster tartare, accompanied or not by some asparagus tips. Older wines ask for firm sea fish or veal in a creamy sauce.
ABOUT DOMAINES DES BAUMARD
In the heart of the Loire Valley lies the Domaine des Baumard, in Rochefort sur Loire, about 20 km southeast of Angers. The domain is located on a small noble estate from the 17th century, Logis de la Giraudière. Wine has been made here since 1634! After the devastating invasion of the American voracious louse phylloxera, the family domain became a grafting and cultivation site for new vines on American rootstocks. In 1955,
Jean Baumard returns to the wine growing on the estate. In the 50s and 60s he expanded the estate with vineyards in Anjou itself, but also on the other side of the Loire river: Quarts de Chaume, Savennières. In 1987 Florent Baumard takes over the estate from his father with a goal in mind: to combine the specific terroir characteristics with excellent technical knowledge and skills. The result is a true aromatic
explosion and a very homogeneous wine range. The AOC area Savennières is less than 130 hectares in size and has a legally imposed maximum yield of 50 hl/ha. The 'Clos du Papillon' owes its name to the butterfly (papillon) shape of the 10 ha vineyard above the village of Savennières. The Baumard part of the Clos du Papillon is located in the eastern 'wing' of the butterfly, with an ideal location to the south. The soil consists of a mixture of here and there split and weathered, shiny beige, gray or even purple slate, and sandstone, sometimes purple, sometimes greenish due to the high feldspar content.

The 2019 Savennieres Clos du Papillon exhales a shy and closed bouquet with aromas of lemon, spring flowers and ripe orchard fruits. Medium to full-bodied, rich and satiny, it has a delicate core of fruit with a phenolic, slightly bitter aftertaste. It can be drinking anytime over the next decade. Bottled with a screw-cap closure.
The Domaine Baumard, deeply rooted in the dark schist soils of Anjou Noir since 1634, has long been under the meticulous stewardship of the Baumard lineage. Jean Baumard initiated the modern chapter of this enduring estate. His tenure was marked by significant expansions, notably into the distinguished appellations of Quarts de Chaume and Savennières, and by the adoption of viticultural practices that, for the 1950s, were remarkably progressive—such as high-density planting and early forms of disease management, predating the sustainable viticulture movement. Jean Baumard’s innovative spirit also led to the early adoption of screw caps, a radical departure from the normative bottling practices of his era, signaling a commitment to wine preservation and quality consistency. Since the 1990s, the estate’s oversight has passed to Jean’s son, Florent, who has continued building upon his father’s innovative and sustainable vineyard management ethos. Florent’s commitment is evident through his advocacy of VHL (Vignes Hautes et Larges) viticulture, which promotes heightened and widely spaced vines to optimize leaf canopy exposure. Concurrently, he has initiated a gradual shift from chemical products to more natural soil cultivation methods, ensuring the estate’s fidelity to sustainable practices remains as steadfast as its heritage. In the winery, Florent uses gentle extraction and presses with whole bunches. The result is creamy, phenolic wines that can age very well.

This powerful white shows real presence and substance, with a halo of smoke, saline and grilled herbs overlaying a core of crisp fruit -- apple, melon and quince -- all held upright by a steely beam of acidity. Fresh-cut chive and grilled oregano add to the savory complexity on the finish, which stretches way out with hints of salted caramel and verbena. Still tight, this needs time. Best from 2026 through 2035. 200 cases imported.

Light golden. High toned and bright, with a pretty complex nose of honeysuckle, tangerine, citrus blossom, and rosewater. The palate is full-bodied, with dense, ripe orchard and citrus fruit, notes of sea spray, salt and white pepper, leading to a finish laced with crushed shell and talc. Powerful and delightful.

Evelyne de Pontbriand took over her venerable family estate—known historically as the Château des Vaults but now known as Domaine du Closel—in 2001 in a career change from teaching French literature. Domaine du Closel has always been run by women. Evelyne inherited the estate from her mother, Michèle de Jesse, who in turn inherited the estate from her aunt, Madame du Closel. Evelyne eventually became president of the Savennières AOC. Clos du Papillon, her top site, is one of the three most celebrated coulées in Savennières, along with La Roche Aux Moines and La Coulée de Serrant. Times have been tough lately with devastating frosts. “In 2017, I lost almost all of my vines in one night,” she says, adding that Domaine du Closel only made 1,700 bottles of Savennières that year. Things righted themselves with a very promising 2018 vintage.

Baumard is located in the heart of Anjou, in the town of Rochefort-sur-Loire, just south of Savennières. The domain has been family owned since 1634. Where Jean Baumard developed it in the 1950s, his son Florent has made it one of the best wine producers in the Loire Valley today. Florent is considered one of a kind by many leading wine magazines.
He makes several cuvées of Savennières, the great dry chenin blanc, in addition to very nice Coteaux de Layon. The domain works organically, without certification. Florent Baumard believes that human intervention should remain possible in both vineyard and wine cellar. His Quarts de Chaume is a real icon in the international wine world; this vineyard has recently been elevated to grand cru status!
