Description
The Signature is specially dedicated to everyone who has meant something to the Yalumba company since its foundation. Yalumba characterizes itself as a family business with a modern vision that takes its responsibility for the natural environment seriously. After picking the Shiraz and Cabernet grapes from the best plots of Yalumba, the wine ages for 19 months in 25% new French barriques and Hungarian barriques. After bottling, the wine is bottle-aged for some time. The Yalumba The Signature Cabernet - Shiraz comes from the impressive 2019 vintage. In the glass it has a medium ruby red color with fresh aromas of mint, blueberries, small red berries and cedar notes in the glass. A light leaf aroma appears as the wine opens up more over time. A refined and complex taste that is wonderfully fresh with seamlessly integrated oak. Generous red berries are wrapped in fine-grained tannins. A medium to full-bodied wine with long, flowing tannins. A very refined 'Signature'. Delicious with slow-cooked beef tenderloin, potatoes, charred beetroot and horseradish or a West Indian spiced aubergine curry.

The 2019 The Caley Cabernet & Shiraz comprises 77% Coonawarra Cabernet Sauvignon, the balance 23% Barossa Shiraz (included in this a small component of Eden Valley). The Coonawarra component is from a 2.7-hectare plot planted in 1992 on a patch of dirt with higher clay content than the traditional terra rossa soils. This matured for 19 months in 24% new French barriques, the balance for one year and in older barriques. Aromatically, the wine leads with fruit instead of oak, with dark chocolate, dark berries and exotic spice coloring the bouquet. In the mouth, the wine is texturally svelte: while the tannins are profuse, they are finely milled and quite elegant. It is clear the season was warm, in that this is quite robust, but it is also powerful and sleek too. So, there exists a contrast of experience here. Very good. 14% alcohol, total acidity 6.54, pH 3.55, sealed under natural cork and wax.

A full-weighted, archetypal Aussie blend. Cabernet and shiraz, both from the Barossa. The top wines of Yalumba have undergone considerable refinement in recent years. The tannins, better managed; the fruit, more restrained; the oak, judicious. Here, an example. Fresh and lithe. Scents of anise, bay leaf and kirsch, with a nourishing core of beef bouillon. An expansive sweetness grows in trajectory, with a douse of menthol at the finish. Drinkable now, but best from 2025.

This beautifully composed 2019 Cabernet & Shiraz The Signature from Barossa is built for the long haul but takes a little time to show its cards. It starts a little shy with cascading blackberry, mulberry and cedar aromas while stocky complexity from extended oak maturation shows. A lovely palate combines dense fruits, good underlying acidity and a firm bed of tannins. A fantastic conclusion, still keeping its shape and composure over a long, sustained finish.
