Description
The Signature is specially dedicated to everyone who has meant something to the Yalumba company since its foundation. Yalumba characterizes itself as a family business with a modern vision that takes its responsibility for the natural environment seriously. After picking the Shiraz and Cabernet grapes from the best plots of Yalumba, the wine ages for 19 months in 25% new French barriques and Hungarian barriques. After bottling, the wine is bottle-aged for some time. The Yalumba The Signature Cabernet - Shiraz comes from the impressive 2019 vintage. In the glass it has a medium ruby red color with fresh aromas of mint, blueberries, small red berries and cedar notes in the glass. A light leaf aroma appears as the wine opens up more over time. A refined and complex taste that is wonderfully fresh with seamlessly integrated oak. Generous red berries are wrapped in fine-grained tannins. A medium to full-bodied wine with long, flowing tannins. A very refined 'Signature'. Delicious with slow-cooked beef tenderloin, potatoes, charred beetroot and horseradish or a West Indian spiced aubergine curry.

There was no 2020 Signature made. The year was very hot, and the Cabernet Sauvignon wasn't in the condition that the winemaking team wanted for the Signature; that decision was made early-on in the season. The 2021 The Signature Cabernet Sauvignon Shiraz is vibrant and fresh on the nose, and it leads with cassis, raspberry and pink peppercorns. It's alive and electric with flavor. 2021 was a lovely season in the Barossa: cool, mild and long, with very little climatic pressure to pick prior to when producers deemed the fruit ready. There are hints of strawberry, scraped vanilla pod, coffee grounds and star anise. I really like the aperture of this wine, with its definition, focus and freshness. 14.5% alcohol, total acidity 6.06, pH 3.63, sealed under natural cork.

This 2021 The Signature, a Cabernet/Shiraz blend, is beautifully pure and pristine with aromas of coca, mahogany, blackberry, fruit pastilles and toasted cloves with a veneer of vanillin oak. Young, and tightly crafted with a seamless mid-weight palate radiating with dark cherry flavors laced with ironstone. Powdery tannins support a long and fine finish. A young stallion that needs time to shine.
