Recaredo Winery
Founded in 1924 in Sant Sadurní d'Anoia, Recaredo is among the absolute top producers of Spanish sparkling wine. In 2024, the house celebrated its centenary. As co-founder of Corpinnat, Recaredo is one of the leading producers within this quality movement in the Penedès region. The family business works exclusively with its own vineyards, which have been organic and biodynamically certified for decades. With approximately 90 hectares of family-owned vineyards and a deliberate focus on selection and low yields, Recaredo is among the most serious and uncompromising projects in Spain. At Recaredo, the bottles are disgorged by hand without freezing the necks. Recaredo's Cavas are among the pinnacle of sparkling wines, and their quality often surpasses that of well-known champagne houses. Recaredo is a master of long-aged cavas and almost always beats many well-known champagne brands, especially when considering price, where, in our opinion, they beat all their French counterparts. Corpinnat and exclusivity
Corpinnat stands for provenance, craftsmanship and long maturation within the heart of Penedès. Recaredo meets exceptionally strict requirements and is monitored by Bureau Veritas. This means, among other things: 100% own vineyards within the Corpinnat zone, 100% dry organic and biodynamic farming, exclusive native grape varieties such as Xarel lo and Macabeu, entire hand-harvesting, vinification on the estate, use of own yeasts for both primary and secondary fermentation, secondary fermentation in the bottle with must, minimum maturation of 30 months, maturation with natural cork, manual remuage and manual disgorgement without freezing.
Recaredo produces exclusively vintage Brut Nature wines. The minimum bottle aging period has been increased to 40 months, meaning the estate will deliberately not release any wine for a year at certain times. Yields have dropped dramatically in recent years, from 42 hl/ha in 2019 to just 14.7 hl/ha in 2024. This extreme selection underscores the estate's exclusive character.
Origin and vintage 2019
The 2019 Subtil comes from clay-rich soils in Penedès and combines ripeness with crisp acidity. The long aging of 48 months on lees adds complexity and depth. The second fermentation uses must from the following year's vineyards, contributing to its authenticity and terroir expression.
Vineyards and grape varieties
This cuvée is made from 100% Xarel·lo grapes from the Serral del Roure vineyard. Biodynamic farming and low yields create concentration and tension. Here, Xarel·lo reveals its full potential as a grape for high-end, gourmet sparkling wines.
Vinification and maturation
After initial aging in stainless steel and partially in wood, the second fermentation takes place in the bottle with the wine's own must. The wine is aged for 48 months on lees, resulting in pronounced autolytic complexity and a fine, chalky mousse. Everything is done entirely by hand.
Color, smell and taste
Clear, pale yellow with fine, elegant bubbles. The nose reveals notes of pastry, lemon tart, wild herbs, and floral nuances, complemented by subtle smoky and toasted notes.
Dry, creamy, and silky on the palate with a chalky tension. The mousse is refined and integrated. The wine combines volume with freshness and concludes with a savory, slightly tertiary finish that emphasizes complexity and precision.
Drinking window and development
With ratings of up to 94+ points, the 2019 Subtil is among the most expressive sparkling wines from Penedès. The recommended drinking window runs from 2025 to around 2035, with further bottle aging bringing additional depth. The 2019 Subtil Finca, with more time in bottle with lees than when I tasted it last year (48 months versus 37), has more intense smoky and toasted aromas and more evidence of the effect of the decomposition (autolysis) of the lees in contact with the wine. It has a bright, almost fluorescent yellow color and a complex, elegant but also powerful profile in a very complete vintage with ripeness and freshness, 11.5% alcohol with a pH of 3.3 and 4.7 grams of acidity. It comes from the Serral del Roure vineyard, and the Xarel.lo was refermented with must from the following year from their own vineyards (perhaps around 10% of the volume); so, they keep the base wine for one year aging in stainless steel and partly in oak for one year while waiting for the must from the same vineyard from the following vintage. It takes time for the wine to open up in the glass; it's still austere when compared with the 2018 Serral del Vell, velvety and with subtle carbonic gas, making it a very gastronomical wine, tasty and dry, chalky. 16,000 bottles produced. The 2020 will not be released until well in to 2026.
Recaredo, one of the wineries leading the group of quality producers of sparkling wine from Penedès, Corpinnat, celebrated its 100 anniversary in 2024. They are one of the most serious projects in Spain. They only work with grapes from their own vineyards, long-certified organic and biodynamic, 90 hectares of family vineyards, with planting aimed at producing 280,000 bottles of sparkling wine and with a margin to sort, select and discard in challenging years.
They continue to be audited by Bureau Veritas for the following points:
• 100% own vineyards in the Corpinnat region,
• 100% dry-farming organic and biodynamic viticulture,
• 100% indigenous grape varieties, Xarel.lo and Macabeu,
• 100% hand-harvested,

They only produce single-harvest brut nature wines and are going to increase the minimum time with lees in bottle to 40 months. So, at one point, they have to be one year without selling any wine...
The yields in the last few years have diminished tremendously, from 42 hectoliters per hectare in 2019 to 26 in 2021 and 2022, 23 in 2023 and only 14.7 in 2024.

The Mata family of Recaredo Cava has been making high-quality cavas since 1924. Their estate is situated in the Grand Cru area for Spanish cavas: Sant Sadurni d'Anoia, Vilobi de Penedes, Subirat and Torralavit in the Alt Penedes. The third, fourth and fifth generations are currently active in the company and still produce very high quality cava. Recaredo is a winery run by a family of winegrowers who specialize in high quality brut nature sparkling wines with the distinctive character resulting from long maturation and together with Mestres they are the absolute masters of Long-aged Cavas and are Parker compared to the Tondonias among the Cavas. At Recaredo they produce unprecedented high quality wines that are aged for a very long time and are made organic / biodynamic (certified).
Since 2006, all 50 hectares of their vineyards are cultivated according to DEMETER regulations. The grapes are picked by hand and fermented separately for each plot in their own cellar. They only use 40% of the must, only the first juice released after bruising is good enough for their cava. The fermentation of the must takes place partly in oak and partly in a steel tank. After fermentation and assembling of the still wine, the bottles are filled and capped with a natural cork to disappear for a period of between 30 and 120 months in the beautiful cellars of Recaredo. Every 14 months the bottles are shaken and moved to 'move' the yeast present in the bottle. According to Ton Mata, this ensures a better development of the taste. When the bottles are ready for disgorgement, they are moved to Pupitres where they are turned by hand so that the yeast plug slowly descends to the neck.
Recaredo is very committed to the Penedès region and produces in an honest way, without any artifice - great wines from its own vineyards and even since 2014 has started working exclusively with historical varieties from the Penedès region: Xarel lo, Parellada and Macabeu for sparkling whites and Garnacha and Monastrell for rosés. The Xarel·lo variety, typical of the ancient Penedès wine region, accounts for 60% of the vineyard area. The variety's long aging ability, Xarel-lo backbone and acidity make it a perfect choice for the base of our top quality sparkling wines, which with very long aging yields exceptionally fine wines.
Recaredo wines are characterized by their essentially gourmet style, a character marked by elegance and subtlety that has impressed the most discerning food and wine critics, including contributors to The New York Times, the prestigious La Revue de Vin de France, Le Monde and the influential American publication Robert Parker's Wine Advocate.
The cornerstone of Recaredo's philosophy as grape growers and winemakers is a respectful alliance between people and land. They (and we) believe that a fine wine is one that reflects the land of its birth. That is why they only make vintage sparkling wines, which means that they are wines from a specific year and not a blend of years. They also practice biodynamic agriculture, an approach that goes one step further than organic. In 2010, Recaredo was the first winemaker in the Penedès region to obtain a certification for biodynamic viticulture; and in 2013, the first winemaker in the area to be accepted as a member of La Renaissance des Appellations, a prestigious international association of biodynamic winegrowers. In the vineyard, they only intervene when absolutely necessary, always striving to maintain the balance of the ecosystem, respecting the land in order to achieve the truest expression of each vintage. At Recaredo, we always prioritize natural balances and respect for biodiversity and the environment. We work our vineyards without herbicides, insecticides or synthetic chemicals and only use organic fertilizers of natural origin, which are composted ourselves.
Long Aged Cava
Like sentries patiently waiting in silence, Recaredo's bottles remain in the darkness of the cellars for at least 30 months (two and a half years) until they take on a truly unique character. In the case of Recaredo's most exclusive family collections, some of the sparkling wines are aged for almost 30 years, preserving the delicacy of the time and a wealth of elegant and complex nuances.

Since 2006, all 50 hectares of their vineyards are cultivated according to DEMETER regulations. The grapes are picked by hand and fermented separately for each plot in their own cellar. They only use 40% of the must, only the first juice released after bruising is good enough for their cava. The fermentation of the must takes place partly in oak and partly in a steel tank. After fermentation and assembling of the still wine, the bottles are filled and capped with a natural cork to disappear for a period of between 30 and 120 months in the beautiful cellars of Recaredo. Every 14 months the bottles are shaken and moved to 'move' the yeast present in the bottle. According to Ton Mata, this ensures a better development of the taste. When the bottles are ready for disgorgement, they are moved to Pupitres where they are turned by hand so that the yeast plug slowly descends to the neck.
Recaredo is very committed to the Penedès region and produces in an honest way, without any artifice - great wines from its own vineyards and even since 2014 has started working exclusively with historical varieties from the Penedès region: Xarel lo, Parellada and Macabeu for sparkling whites and Garnacha and Monastrell for rosés. The Xarel·lo variety, typical of the ancient Penedès wine region, accounts for 60% of the vineyard area. The variety's long aging ability, Xarel-lo backbone and acidity make it a perfect choice for the base of our top quality sparkling wines, which with very long aging yields exceptionally fine wines.
Recaredo wines are characterized by their essentially gourmet style, a character marked by elegance and subtlety that has impressed the most discerning food and wine critics, including contributors to The New York Times, the prestigious La Revue de Vin de France, Le Monde and the influential American publication Robert Parker's Wine Advocate.
The cornerstone of Recaredo's philosophy as grape growers and winemakers is a respectful alliance between people and land. They (and we) believe that a fine wine is one that reflects the land of its birth. That is why they only make vintage sparkling wines, which means that they are wines from a specific year and not a blend of years. They also practice biodynamic agriculture, an approach that goes one step further than organic. In 2010, Recaredo was the first winemaker in the Penedès region to obtain a certification for biodynamic viticulture; and in 2013, the first winemaker in the area to be accepted as a member of La Renaissance des Appellations, a prestigious international association of biodynamic winegrowers. In the vineyard, they only intervene when absolutely necessary, always striving to maintain the balance of the ecosystem, respecting the land in order to achieve the truest expression of each vintage. At Recaredo, we always prioritize natural balances and respect for biodiversity and the environment. We work our vineyards without herbicides, insecticides or synthetic chemicals and only use organic fertilizers of natural origin, which are composted ourselves.
Long Aged Cava
Like sentries patiently waiting in silence, Recaredo's bottles remain in the darkness of the cellars for at least 30 months (two and a half years) until they take on a truly unique character. In the case of Recaredo's most exclusive family collections, some of the sparkling wines are aged for almost 30 years, preserving the delicacy of the time and a wealth of elegant and complex nuances.

Recaredo Winery
Founded in 1924 in Sant Sadurní d'Anoia, Recaredo is among the absolute top producers of Spanish sparkling wine. In 2024, the house celebrated its centenary. As co-founder of Corpinnat, Recaredo is one of the leading producers within this quality movement in the Penedès region. The family business works exclusively with its own vineyards, which have been organic and biodynamically certified for decades. With approximately 90 hectares of family-owned vineyards and a deliberate focus on selection and low yields, Recaredo is among the most serious and uncompromising projects in Spain. At Recaredo, the bottles are disgorged by hand without freezing the necks. Recaredo's Cavas are among the pinnacle of sparkling wines, and their quality often surpasses that of well-known champagne houses. Recaredo is a master of long-aged cavas and almost always beats many well-known champagne brands, especially when considering price, where, in our opinion, they beat all their French counterparts. Corpinnat and exclusivity
Corpinnat stands for provenance, craftsmanship and long maturation within the heart of Penedès. Recaredo meets exceptionally strict requirements and is monitored by Bureau Veritas. This means, among other things: 100% own vineyards within the Corpinnat zone, 100% dry organic and biodynamic farming, exclusive native grape varieties such as Xarel lo and Macabeu, entire hand-harvesting, vinification on the estate, use of own yeasts for both primary and secondary fermentation, secondary fermentation in the bottle with must, minimum maturation of 30 months, maturation with natural cork, manual remuage and manual disgorgement without freezing.
Recaredo produces exclusively vintage Brut Nature wines. The minimum bottle aging period has been increased to 40 months, meaning the estate will deliberately not release any wine for a year at certain times. Yields have dropped dramatically in recent years, from 42 hl/ha in 2019 to just 14.7 hl/ha in 2024. This extreme selection underscores the estate's exclusive character.
Origin and vintage 2019
The 2019 Subtil comes from clay-rich soils in Penedès and combines ripeness with crisp acidity. The long aging of 48 months on lees adds complexity and depth. The second fermentation uses must from the following year's vineyards, contributing to its authenticity and terroir expression.
Vineyards and grape varieties
This cuvée is made from 100% Xarel·lo grapes from the Serral del Roure vineyard. Biodynamic farming and low yields create concentration and tension. Here, Xarel·lo reveals its full potential as a grape for high-end, gourmet sparkling wines.
Vinification and maturation
After initial aging in stainless steel and partially in wood, the second fermentation takes place in the bottle with the wine's own must. The wine is aged for 48 months on lees, resulting in pronounced autolytic complexity and a fine, chalky mousse. Everything is done entirely by hand.
Color, smell and taste
Clear, pale yellow with fine, elegant bubbles. The nose reveals notes of pastry, lemon tart, wild herbs, and floral nuances, complemented by subtle smoky and toasted notes.
Dry, creamy, and silky on the palate with a chalky tension. The mousse is refined and integrated. The wine combines volume with freshness and concludes with a savory, slightly tertiary finish that emphasizes complexity and precision.
Drinking window and development
With ratings of up to 94+ points, the 2019 Subtil is among the most expressive sparkling wines from Penedès. The recommended drinking window runs from 2025 to around 2035, with further bottle aging bringing additional depth. The 2019 Subtil Finca, with more time in bottle with lees than when I tasted it last year (48 months versus 37), has more intense smoky and toasted aromas and more evidence of the effect of the decomposition (autolysis) of the lees in contact with the wine. It has a bright, almost fluorescent yellow color and a complex, elegant but also powerful profile in a very complete vintage with ripeness and freshness, 11.5% alcohol with a pH of 3.3 and 4.7 grams of acidity. It comes from the Serral del Roure vineyard, and the Xarel.lo was refermented with must from the following year from their own vineyards (perhaps around 10% of the volume); so, they keep the base wine for one year aging in stainless steel and partly in oak for one year while waiting for the must from the same vineyard from the following vintage. It takes time for the wine to open up in the glass; it's still austere when compared with the 2018 Serral del Vell, velvety and with subtle carbonic gas, making it a very gastronomical wine, tasty and dry, chalky. 16,000 bottles produced. The 2020 will not be released until well in to 2026.
Recaredo, one of the wineries leading the group of quality producers of sparkling wine from Penedès, Corpinnat, celebrated its 100 anniversary in 2024. They are one of the most serious projects in Spain. They only work with grapes from their own vineyards, long-certified organic and biodynamic, 90 hectares of family vineyards, with planting aimed at producing 280,000 bottles of sparkling wine and with a margin to sort, select and discard in challenging years.
They continue to be audited by Bureau Veritas for the following points:
• 100% own vineyards in the Corpinnat region,
• 100% dry-farming organic and biodynamic viticulture,
• 100% indigenous grape varieties, Xarel.lo and Macabeu,
• 100% hand-harvested,
• 100% vinification on the property,
• 100% yeasts from their own vineyards for the first and second fermentations,
• 100% second fermentation in the bottle with must,
• 100% aging for a minimum of 30 months,
• 100% aging with a natural cork stopper,
• 100% manual rinsing on a wine rack, and
• 100% hand-disgorged without freezing.
They only produce single-harvest brut nature wines and are going to increase the minimum time with lees in bottle to 40 months. So, at one point, they have to be one year without selling any wine...
The yields in the last few years have diminished tremendously, from 42 hectoliters per hectare in 2019 to 26 in 2021 and 2022, 23 in 2023 and only 14.7 in 2024.

The Mata family of Recaredo Cava has been making high-quality cavas since 1924. Their estate is situated in the Grand Cru area for Spanish cavas: Sant Sadurni d'Anoia, Vilobi de Penedes, Subirat and Torralavit in the Alt Penedes. The third, fourth and fifth generations are currently active in the company and still produce very high quality cava. Recaredo is a winery run by a family of winegrowers who specialize in high quality brut nature sparkling wines with the distinctive character resulting from long maturation and together with Mestres they are the absolute masters of Long-aged Cavas and are Parker compared to the Tondonias among the Cavas.
