Pago de los Capellanes once started with a number of tinto fino (tempranillo) vines. After years of cloning the best grapes from that harvest, the company now owns 100 hectares of vineyards and ranks among the top of the DO. Quality comes first and is maintained through a strict selection in the orchard, during the cloning process and in the cellar.
The 100 hectares are divided over 35 plots, each plot has its own approach. Around the harvest period, a sample of the fruit is taken twice a day to determine ripeness and evolution. The daytime temperature of 25°C with the contrasting 5°C at night gives the wine maturity, more colour, soft tannins and, above all, a good acid structure.
This house takes its name from the chaplains of the parish of Pedrosa, who regularly visited the vineyards. The house was founded in 1996 and is one of the most remarkable wineries. It has built its reputation by developing especially very elegant wines. Dark, brooding and full of blackberries, combined with a number of spices that have been aged for 18 months in French oak. The tannins are nice and give a good structure, but they do not dominate the pure fruit. This is a very balanced wine with a long finish.
Pago de los Capellanes is located near the village of Pedrosa de Duera in the heart of the Ribera del Duero. An area of the Chaplains formed by areas of land planted with olive or grape crops. This is clearly an area with its own wine history. Pago de los Capellanes once started with some tinto fino (tempranillo) vines. In the enormous underground cellar, which is just as imposing as a catacomb, the wines are aged for up to three years. The impressive long rows of French wooden barrels are arranged to the millimeter. There is serious maturing here, there is no doubt about it.
The Pago de los Capellanes wines have a soul and speak for themselves. From the young wine to the crus. El Nogal and El Picón are the real deal: fresh juice, creamy mouthfeel, length in days and digestibility that makes you refill the glass.
