Rubinelli Vajol is the new superstar. The wine is authentic and not as sweetened as one often tries to do in the Valpolicella. James suckling writes in his report about the Valpolicella: " Rubinelli Vajol Valpolicella Classico Superiore which comes from a producer that is arguably the new superstar of the style. The 2015 Rubinelli Vajol Recioto della Valpolicella Classico is a blend of 50% Corvina, 25% Corvinone, 15% Rondinella, 5% Molinara, 5% Oseleta. The selected grapes are stored for five months in the tuff cave where the natural drying process takes place. In February, the grapes undergo a fermentation and maceration process at controlled temperatures. Followed by maturation in small barrels for approximately 10-12 months and then the wine remains in Rubinelli's cellars for at least another year.
All grapes come exclusively from the fields around Corte Sant'Anna, this gives a special uniqueness to the wine and makes it unmistakable: wine born on tuff. This area was once the sea - imagine a sunny bay. The soil consists of marl formed between the Mesozoic era (150 million years ago) and the Tertiary era (60 million years ago) followed by the origin of the Alpine mountains. The soil is very calcareous, ideal for moderating the natural vigor of the vines. Limestone also has sponge-like properties: the ability to hold water for long periods of time, allowing it to pass through only when the plants need it. This always keeps the grapes well hydrated. The soil is thin but rich in organic matter which allows the vines to live in perfect nutritional balance. This harmony is reflected in the quality of the wines, which are always elegant and fully express, both in their aroma and on the palate, their rich polyphenolic multitude. Rubinelli Vajol wines are born in the ground before they reach the wine cellar; they are gifts of nature and of the formation of land structures in the Conca del Vajol.
On the nose, this amazing red (dessert) wine has character and personality. Unlike many mass Recioto, this Rubinelli has been given sufficient time and heat for the grapes to slowly ripen on the vines on the sunny hills in the grandcru area Vajol of Valpolicella and has been given sufficient time to rest after which the best selected bunches are allowed to drying and just the right time for the wine to finally mature dreamily in a single oak barrel from which 5000 bottles were made. Each bottle is numbered.
The Recioto della Valpolicella Classico by Rubinelli Vajol offers a very spicy and exotic scented bouquet. You get aromas of Indian wood and the Grand Bazaar of Istanbul. Dried plums and spicy Spanish cedar are followed by tobacco, dried leather and candied fruit with a mouthfeel that is sweet and generous. This wine represents the same blend of grapes as in the Amarone della Valpolicella Classico. The Recioto is the sweet essence of the land, as exquisitely unforgettable as an endless love poem, where Conca del Vajol is the seal for an exclusive creation, a timeless nectar to enjoy always. The great thing about this Recioto is that despite the sweetness, there are also nice fresh acids, which makes this wine resemble a well-made port wine.
Serving tips: The harmonious bouquet, freshness and sweet taste make this wine an ideal accompaniment for any special occasion. Perfect with very mature, strong-tasting or veined cheeses. Favorite as a dessert wine. Particularly suitable for cakes, almond cantucci biscuits, extra dark chocolate. Excellent, especially neat as an aperitif before dinner or as a sweet ending after dinner. Nicola, Renzo and Alberto Rubinelli started work to enlarge their winery last year. This estate is distinguished by the fact that its vineyards are all located in the immediate vicinity of the winery in a natural amphitheater of vines.
