the Pazo de Señorans winery

Pazo de Señorans is considered one of the leading producers in Rías Baixas. The estate is located in a classic Galician pazo, a historic manor house converted into a winery. Since the 1980s, the estate has dedicated itself entirely to Albariño, the grape that finds its purest expression here in the granite-rich soils and Atlantic climate. Through patience, precision, and a strong focus on lees aging, Pazo de Señorans has become a benchmark for the region.

the terroir of Rías Baixas

The vineyards are located in the Val do Salnés subregion, the coolest part of the Rías Baixas. The vines for the Selección de Añada come from the Los Bancales vineyard, planted about fifty years ago. The soil consists primarily of granite and sand, giving the wines a pronounced minerality and saline tension. The proximity of the Atlantic Ocean brings fresh sea breezes and mild temperatures, contributing to the vibrant acidity and slow ripening of the grapes.

the grape and the 2015 harvest

The 2015 Selección de Añada is made from 100% Albariño grapes. The growing season yielded healthy grapes with excellent ripeness and retained their freshness. This combination resulted in a wine with great balance, which still looks and tastes remarkably youthful today. With 13% alcohol and a generous seven grams of total acidity, the wine has a remarkable tension that gives it longevity. Harvesting was carried out entirely by hand to select only the finest grapes.

vinification and maturation

After harvest, the grapes were fermented with indigenous yeasts in stainless steel tanks, without malolactic fermentation to preserve the natural freshness. The wine then aged for over 30 months on its lees in tanks, with regular stirring for added texture and complexity. The wine was bottled in June 2024, after nearly nine years of careful aging. This process makes the Selección de Añada unique, as Albariño is rarely aged with such patience and precision.

color, smell and taste

The 2015 Selección de Añada displays a bright, almost fluorescent color. The nose reveals delicate aromas of shells, sea breeze, freshly mown grass, and white flowers. The overall effect is subtle, complex, and elegant. On the palate, the balance is immediately apparent: juicy fruit, remarkable freshness, and a fine texture supported by a lingering, mineral finish. Although the wine is now nine years old, it feels remarkably vibrant and even somewhat young, with a long future ahead of it.

reviews and potential

The international press is full of praise. The Wine Advocate awarded this vintage 97 points and called it "the finest vintage in memory." The wine is praised for its elegance, nuance, and remarkable freshness. With a production of 18,000 bottles, it is also rare. Its aging potential is impressive: between 2025 and 2035, the wine will continue to develop and show increasing layers. For Albariño lovers, this is a benchmark wine and a rare example of the grape's potential.

Pazo Señorans, de templo bodeguero a lugar de ensueño para eventos en Meis (Pontevedra)

Pazo de Señorans is located in the wine region of Rias Baixas which is located in Galicia, all the northwest of Spain and north of Portugal. This area is famous for producing Spain's best white wines, Rias Baixas' Albariño. Like many regions in Galicia, the soil here is also completely made of granite. The top layer consists of sand, mainly crumbled granite particles. This ensures that there is perfect water drainage from the soils. At low yields, the granite soils also ensure a nice minerality in the grapes.

Bodegas Pazo de Señorans is located in Vilanovina, in the valley of the Rio Salnes, east of Pontevedra. The domain was bought in 1979 by Marisol Bueno (president of the Rias Consejo) and her husband Javier Mareque. A lot of money was invested at Pazo de Senorans in replanting the vineyards. Everything was harvested and replanted with Albarino grapes, which give such astonishing results here. The grape vines are planted 100% in pergola form, the authentic way of planting grapes in this region. That way, the grapes are protected from the rain. In 1989, a great deal of investment was made to completely renew the means of production, thus obtaining the latest and most modern means of producing wine.

The first harvest was in 1990. In 1992, the young and promising oenologist Ana Quintela was brought into the company and since then the wines have seen an annual increase in quality. Pazo de Señorans is always the last to start the harvest. They harvest with a higher sugar content than the other Bodegas. All this results in optimally and evenly ripe grapes with ultimately more aromas and flavors and less aggressive acids. Harvest is done only by hand, which is a result of the Pergola plantation and then the grapes are also selected by hand.

Pazo de Senorans works with lower yields than other bogegas and this is purely meant that the wines can get more concentration and taste and this is also the only way to let the wines age, because although in Spain the Albariño only wants to be young drinking the Pazo de Señorans has a very nice aging potential.
In addition to the Pazo Senorans, the Pazo Senorans Selección de Añada is also produced: this wine is made from the oldest vines with very low yields. The grapes are only picked when they have reached their ideal ripeness. The grapes then further ripen on low-temperature stainless steel and on its yeast cells (sur lies) for 3 years. The aromatic components of the wine can fully develop in this way. The Pazo Senroans Selección de Añada can be imposed for 10 years without any problem and will improve even further. The work sur lies is also an important part of vinification in the ordinary Pazo de Señorans.

The wines of Pazo Senorans have a clear, light yellow-green color and a pure scent of tropical fruit. These influences are also reflected in the taste. The wine is wonderfully fresh and due to the good ripeness of the fruit, the wine even seems slightly sultry, in other words, mouth filling. The finish is long, intense and complex.

It is not without reason that Ferran Adrià (formerly El Bulli) has chosen this wine as one of his 'open wines', the Pazo Senorans, for his new restaurant 'Tickets' in Barcelona.
