Description
Bodegas Senorans is located in Vilanovina, in the Rio Salnes valley, east of Pontevedra in the RÃas Baixas. The estate was purchased in 1979 by Marisol Bueno (president of the Rias Consejo) and her husband Javier Mareque. A lot of money was invested in replanting the vineyards. Everything was uprooted and replanted with Albarino grapes, which give such astonishing results here. In 1989, a further major investment was made to completely renew the production means and thus they obtained the latest and most modern means to produce wine.
The first harvest was in 1990. In 1992, the young and promising oenologist Ana Quintela was brought into the company and since then the wines have shown an annual upward trend in terms of quality. Pazo de Senorans is always the last to start harvesting. They harvest with a higher sugar content than the other Bodegas. This results in optimally and evenly ripe grapes with ultimately more aromas and flavours and less aggressive acids. Harvesting is done exclusively by hand (which is the only possible way because the vines are planted in pergola form). and then the grapes are also selected by hand. Lower yields are used than elsewhere to obtain more concentration and with a very slow fermentation. This is also the only way to age the wines, because although in Spain people only want to drink Albariño young, this Pazo de Señorans has a very nice ageing potential.
The bodega has recently started to market older vintages (2009 and 2010) from their cellars under the label: Pazo Senorans Collection. Substantially higher in price, certainly because it concerns only a limited number of bottles, but purely to show the wine-loving public that with aging this wine becomes even more special with even better integrated fruit & acid.
Beautiful "full" Albariño, classic, slightly exotic, beautifully aromatic, with soft tones of pear, peach, grapefruit, a hint of honey, minerals and fresh acids. These influences can also be found in the taste. The wine is wonderfully fresh and due to the good ripeness of the fruit, the wine even seems a bit sultry, say mouth-filling. The aftertaste is long, intense and complex. Lovely, fruity and dry taste pattern with mineral finish. A top wine when we talk about the Albariño grape. ! It is not without reason that Ferran Adrià (formerly El Bulli) has chosen this wine as one of his 'open wines' for his new restaurant 'Tickets' in Barcelona.

1. Prawns with garlic, olive oil and parsley
The salty freshness of shrimps fits seamlessly with the mineral character of the wine. Garlic and parsley add an aromatic layer that goes well with the intensity of the Albariño, without dominating it.
2. Whitefish ceviche with lime and coriander
The high acidity in the wine perfectly matches the fresh-sour profile of ceviche. The wine supports the citrus character of the dish and retains its freshness, even with heavily marinated fish.
3. Salad with goat cheese, green apple and walnuts
The combination of freshness (apple), creaminess (goat cheese) and nutty notes (walnuts) brings balance that fits nicely with the juicy and slightly spicy profile of the wine. The wine retains its tension and accentuates the freshness of the dish.
4. Grilled sea bass with lemon and fennel
The fine structure of the fish and the fresh, aniseed character of fennel go very well with the aromas and acids of Albariño. Lemon enhances the fresh character of the wine.
5. Sushi or sashimi with white fish or shrimp
The saltiness of the fish and the umami of the soy sauce are nicely balanced by the minerality and acidity in the wine. Albariño also works refreshing and enhances the pure flavors of raw fish.

Pazo de Señorans is located in the wine region of Rias Baixas which is located in Galicia, all the northwest of Spain and north of Portugal. This area is famous for producing Spain's best white wines, Rias Baixas' Albariño. Like many regions in Galicia, the soil here is also completely made of granite. The top layer consists of sand, mainly crumbled granite particles. This ensures that there is perfect water drainage from the soils. At low yields, the granite soils also ensure a nice minerality in the grapes.
