Unique location and terroir characteristics form the basis of this Quarts de Chaumes, the Chaume is a tributary of the Loire. When autumn sets in, the water cools considerably and morning mist creates the possibility of noble rot. The grapes are, withered and well, picked in several picking courses (tries). The bottom layer consists of, among other things, gray schist layers and quartz. Clear deep golden yellow wine with green brilliance. Rich and complex on the nose with hints of honey, pear, apricot, flowers and almonds. On the palate a sweet, luscious but fresh and rich wine, remarkable texture, bold but crisp, clean and elegant. Purebred, mineral, complex richness of taste from floral to citrus and a complete fruit orchard. A party in itself.
For this classic cuvée wine, the grapes are picked by hand from older vines. Only overripe, shriveled and/or botrytis blessed grapes are harvested, in several successive pickings. The yield is very low, 22-25 hl/ha. After the pneumatic pressing, the fermentation takes place in stainless steel tanks, under controlled temperature. .
ABOUT DOMAINES DES BAUMARD
The Domaine des Baumard is located in the heart of the Loire Valley, in Rochefort sur Loire, about 20 km south-east of Angers. The domain is located on a small noble estate from the 17th century, Logis de la Giraudière. Wine has been made here since 1634! After the devastating invasion of the American voracious louse phylloxera, the family estate became a grafting and breeding ground for new vines on American rootstocks. In 1955 brought
Jean Baumard returned the winegrowing to the domain. In the 50s and 60s he expanded the domain with vineyards in Anjou itself, but also on the other side of the Loire river: Quarts de Chaume, Savennières. In 1987 Florent Baumard takes over the domain from his father with one goal in mind: to combine the specific terroir characteristics with excellent technical knowledge and skills. The result is a true aromatic
explosion and a very homogeneous wine range. The AOC area Savennières is less than 130 hectares in size and has a legally imposed maximum yield of 50 hl/ha. The 'Clos du Papillon' takes its name from the butterfly (papillon) shape of the 10 ha vineyard above the village of Savennières. The Baumard section of the Clos du Papillon is located in the eastern 'wing' of the butterfly, ideally located to the south. The soil consists of a mixture of split and weathered, shiny beige, gray or even purplish slate, and sandstone, sometimes purplish, sometimes greenish due to the high feldspar content.
