Description
The Touraine Chenonceaux is the top model of Domaine des Caillots coming from the famous Slex soils (the sandy soil with flint-like clay and limestone soil). The Sauvignon blanc grapes come from their most beautiful vineyard (single vineyard). After the harvest, fermentation takes place in stainless steel vats at 17 - 19 ° C. They choose not to do this too cold in order to preserve the typicity of the terroir. After fermentation, the wine matures on its lees (sur lie) for 7 months in oak barrels.
This great Chenonceaux is straw yellow in the glass with golden reflections. In the nose beautiful fresh aromas of peach and orange. The wine has a beautiful harmony between fruit (apricot, peach, lychee) and structure (creamy, persistence, elegance). The Chenonceaux is a wine that reflects the great maturity of this cuvée with the mineral tones typical of these Silex soils.

At Domaine des Caillots, they have been winemakers from father to son for many generations. They are proud winemakers who stick to traditions but who have also adopted modern techniques and thus have been making excellent wines for many years and at a very affordable price. No mass and in everything quality is more important than quantity. Their family estate consists of 21 hectares of vineyards located on the hills overlooking the River Cher in the Touraine AOC area.
The vineyards are located in famous areas on sandy soils with a varying amount of flint (silex) and limestone soils that give the wine a characteristic taste, classic for the Sauvignon Blanxc from that area. They have been working at Domaine des Caillots for many years using sustainable farming methods with minimal intervention.
