All Salon is one, defined in the singular: a single grape, Chardonnay; a single terroir, the Cote des Blancs; a single 'cru' village, Le Mesnil-sur-Oger; a single year, that of its vintage. And yet every vintage – and not every year can be called a vintage, only the best years – is different from all others. The vagaries of the climate, something in the air, that little something that can change everything: this is where Salon's personality is forged. And Salon 2006 is a great romantic, a lyrical soul, marching to the beat of its own drum. No matter that it has matured for eleven years in the cool silence of the cellars at Le Mesnil-sur-Oger, Salon 2006 comes out unbridled, with the spirit of youthful rebellion.
August was dreadful, cold and rainy, after the perfect sunshine and warmth of June and July. But in the end it was all a false alarm, the fear did not lead to disease problems. September came and was beautiful, with cool mornings and glorious days that lasted throughout the harvest, until October 2nd: the grapes reached their optimum ripeness, yielding musts with beautiful sugar levels balanced by fine acidity, a hallmark of the harvest. Yields? Not too big and not too small. The result: Salon 2006, a great vintage with a great future ahead of it.

The 2006 Salon Blanc de Blancs Le Mesnil Brut has a shining silver-golden color, the bubbles are tiny and enormously fine—they probably wouldn't stop rising from the bottom of the glass if you left the wine in it instead of drinking it. On the nose, there is a fascinating, pure and fresh bouquet with acacia, chalk, incense and concentrated lemon flavors. The 2006 is mouthfilling, round and elegant on the palate; it is dense and tight but also fresh and cleansing, provided with great finesse, mineral complexity, length and structure. The finish is clear and aromatic, round and well balanced, slightly creamy, very intense, greatly finessed and truly elegant, with stimulating salinity in the aftertaste. Being restrained and generous at the same time, the 2006 Salon is a great promise rather than the greatest drinking pleasure today. Although I tasted the Salon several times over 36 hours, there is a chalky layer on everything, a taste of a wet sponge, soaked with a lot of chalk for the moment but also ultra-dark chocolate flavors (with at least 80% cacao) and candied lemon and orange zests. The truth or the soul of the 2006 Salon, I guess, is rather indicated in the almost emptied glass, from which ripe, yellow-fleshed fruit aromas (plums!), brioche, marzipan and floral flavors come out, reflecting a perfect ripeness of fruit as well as the great terroir of Le Mesnil. So, please, don't drink the 2006 straight after opening the bottle. Take a good Champagne glass and give the wine a while to breathe and open up. The aging capacity of the 2006 should be tremendous here.
They call the 2006 Salon "a true romantic" and the vintage 2006 "a beautiful, golden one" at Salon. It was September that rescued the vintage with its "cool mornings and glorious days" that continued throughout the harvest, up to October 2nd. "The grapes reached optimum ripeness, giving musts with magnificent sugar levels balanced by fine acidities." The true class of the 2006 Salon will be detected only in years to come, but its talents seem to be tremendous!

The 2006 Salon is a very rich wine, almost uncharacteristically so. Deep and exotic the 2006 exudes richness in all of its dimensions, with myriad inflections of sumptuous fruit that fill out its ample, large-scaled frame. Today, the 2006 is surprisingly accessible for a young Salon, but it needs time to shed some baby fat. At times, the 2006 recalls the 2002, but it appears to have more phenolic intensity and overall structure. Even with all of its flamboyance and pure volume, the 2006 retains quite a bit of energy and freshness. I imagine it will be a fascinating, utterly compelling Champagne to follow over the next several decades.

The intention of Aimé Eugène Salon was to create a mythical wine from the beginning: one vintage, one plot, one cru and one grape from one village, namely Mesnil-sur-Oger. Only 37 millésimés were made in the 20th century. Five Millésimés have been created in the 21st century. Only the years 2002, 2004, 2006, 2007 and the grandiose 2008 were worth being released on.
History of Salon
Salon is a Champagne producer based in the village of Le Mesnil-sur-Oger (Côte des Blancs, Champagne, France). It is known for producing some of the world's most exclusive and sought-after Champagnes. Founded in 1911 by Eugène-Aimé Salon, the house has a very distinctive focus on producing exceptional Blanc de Blancs Champagnes of one vintage, made exclusively from Chardonnay. Champagne Salon is the sister house of Delamotte, located a little further away. Both houses have the same director Didier Depond and cellar master Michel Fauconnet. In the 1920s and 1930s, this was the personal Champagne of the extremely wealthy Monsieur Salon. The Champagne was only served at his home, or in the Parisian eatery Maxim's, where he frequented.
Philosophy and production of Salon
Champagne enthusiast Aimé Salon initially created Champagne Salon just for himself and his closest friends. The grape variety he was going to use was only Chardonnay, from the Grand Cru Le Mesnil-Sur-Oger. The Vinification of course is the Méthode traditionnelle. The Salon does not undergo malolactic fermentation, remains on the lees for a very long time and receives a very small dosage. Salon has enormous maturing potential and is therefore an ideal champagne to keep and can mature for up to 40 years. Due to its limited production and high quality, Salon Champagne is usually quite expensive and difficult to find. It has built a reputation as a symbol of luxury and excellence in the world of Champagne, and is a preferred choice for special occasions and celebrations among those who appreciate the finest wines.
