Samen met Château Pétrus en Ausone is Château Cheval Blanc één van de legendes van de rechteroever. Bezit altijd een enorme concentratie, maar tegelijkertijd finesse en frisheid. Deze cru is eigendom van de Belg Albert Frère en Bernard Arnault. Het is Pierre Lurton (van de tak van Dominique Lurton) die er de wijn vinifieert (net als in Château d'Yquem). Dit jaar werd voor de vijfde keer gevinifieerd in de ultra moderne nieuwe chais van de architect Christian de Portzamparc. 50 speciaal gevormde (tronconische) betonnen cuvees staan in voor een microvinificatie per perceel. Er werd gekozen voor beton omdat dit een goede thermische isolatie heeft en een tronconische vorm omdat dit voor een zachtere extractie van de bessen zorgt voor een betere gisting. Ook wordt alles gevinifieerd met het principe van de zwaartekracht (dus de wijn of bessen worden niet meer omhoog gepompt). Een gigantische investering ten dienste van de kwaliteit!
De Cheval Blanc 2021 is een blend van 52% Cabernet Franc, 33% Merlot en 5% Cabernet Sauvignon. In het glas is de wijn zeer donker purper met violette schijn. In de neus zeer complexe tonen van fruit, bloemen (lila's en viooltjes), kruiden en frisheid. Memorabel concentraat van verkwikkend rood fruit, zalvende finesse en gracieuze fraîcheur. Als altijd in een pure, verfijnde en bijzonder genuanceerde stijl. Met ladingen kirsch, framboos, bosbessenreductie en onberispelijk geïntegreerd eiken. Na een krachtige aanzet die rijk en vol is, volgt een zeer volumerijke, pure en delicieuze middensmaak met fijne tannines die zeer precies en elegant zijn. Het volume en de vettigheid blijven verder doorgaan in de niet eindigende finale.

2021 Cheval Blanc

A terrific achievement, the 2021 Cheval Blanc is a blend of 52% Cabernet Franc, 33% Merlot and 5% Cabernet Sauvignon. Unfurling in the glass with aromas of raspberries and cherries mingled with notions of cigar wrapper, vine smoke, rose petals and violets, it's full-bodied, layered and concentrated, with an elegantly muscular chassis of ripe, powdery tannin and lively animating acids. Long and penetrating, this is a serious, rather structured young Cheval Blanc that will require and reward patience.
One of Bordeaux's most complex terroirs, Cheval Blanc sits on the site of an ancient river delta, with (to generalize) clay-rich soils in the lower-lying parts where rivulets once flowed and gravel and sand elsewhere. This complexity is reflected, of course, in the resulting wine but also in how it is farmed and made, with thoughtful use of cover crops according to soil type and parcel-by-parcel vinification. A concerted effort is being made, moreover, to bring life back to the vineyard, with hedges of native species to act as wildlife corridors and fruit trees planted among the vines. The same attention to detail that's applied in the vineyards, for example with regard to developing and testing an in-house massal selection, is applied in the cellar, where cooperage trials are notable for their exigence. All of that shows in the glass. Cabernet dominates in the 2021 blend, and the result is a serious Cheval Blanc built for the long haul.

April 2019 Week 4 - Bordeaux 2018, The Wine Advocate
Thirty-three plots contributed to this wine, out of the 43 in production. Five went into Petit Cheval and five into bulk. The 2018 Cheval Blanc is a blend of 54% Merlot, 40% Cabernet Franc and 6% Cabernet Sauvignon, with a 3.75 pH and 14.5% alcohol. Deep purple-black in color, the nose is more open at the core of the wine than the Le Petit Cheval, strutting out of the glass with bold, ripe black cherries, cassis, warm plums and raspberry preserves notes. With coaxing, a whole array of fragrant spice, floral and earth notes emerge, followed by candied violets, star anise, powdered cinnamon, iron ore, tapenade and truffles plus wafts of camphor and mocha. Medium to full-bodied, the palate is firm yet possesses a beautifully plush structure of velvety tannins wrapping round the densely packed, complex, fragrant fruit, with seamless freshness and a very long, layered finish.
“The berries had a lot of tannins,” commented Technical Director Pierre-Olivier Clouet. “It was a challenge to ripen all those tannins!” Cheval Blanc had a particularly long harvest, being among the last to bring in the final parcels of Cabernet Franc on October 11. “We had to wait for each plot to get the right maturity,” added Clouet. “This gave us these wines with great drinkability—very silky and round.”
Yields were a very healthy 43 hectoliters per hectare this year. “Too small of a yield would have been detrimental,” said Clouet. “We had to find the balance in the weather that followed.”
Pierre Lurton, the Director of Cheval Blanc and d'Yquem, joined us at this stage. “This wine truly represents the whole vineyard,” he was excited to add. “Seventy-four percent of our total production went into Cheval Blanc this year, including components of the whole vineyard. Young vines, old vines, clay, gravel and sand—all participated in the final blend.”
This vintage of Cheval Blanc is astonishingly beautiful. Even if the wine doesn’t eventually wind up with a perfect score for this vintage, what I particularly love about the 2018 is that it is so true to the heart-and-soul signature of this amazing vineyard. And, I’m just playing devil’s advocate here, but maybe that is even more important than a perfect score?

The 2021 Cheval Blanc is one of the wines of the vintage. Vertical and aristocratic in bearing, Cheval is just stunning. Time in the glass brings out compelling inner sweetness and perfume to play off a core of rich dark fruit, gravel, spice, menthol and dried flowers. I also tasted the final three blending components, none of which hints at the magnificence of the Grand Vin. Stunning.

The 2020 Cheval Blanc is eternal, seamless and exceptionally beautiful. All the elements are so well put together. Rose petal, blood orange, raspberry jam and cinnamon all take shape in the glass. Above all else, the 2020 Cheval Blanc is a wine of mind-blowing balance. Hints of mocha, raspberry jam, pomegranate and spice emerge with time in the glass. Cheval is quite simply one of the truly great wines of the vintage.
