Description
The Macharnudo Alto vineyard, which covers 56.2 hectares, is planted with the Palomino Fino for the Inocente Fino. Valdespino is the only one who makes Single Vineyard Sherries in Jerez. The white soil is called "albariza" and is very calcareous. Valdespino is also qualitatively distinctive in the way it produces its sherries: all Valdespino sherries are fermented in used wooden barrels (much more work than using stainless steel as all other producers do nowadays). In the bearing system with soleras and criaderas, the Consejo Regulador uses 3 criaderas for Fino sherry. Valdespino uses Inocente for the Fino. This long-term maturation gives the Inocente more complexity, structure and concentration. The sherry is straw yellow in color. Delicate and complex, with clear almond notes. Soft taste, nicely round and slightly oily with structure, volume and also fresh and slightly salty. Lasts long after. Bottles of 0.375 ltr

In the already traditional Jerez, with its historical bodegas and rich family trees, Valdespino is still a very traditional house compared to other bodegas, known for its historical background and traditional way of working. For example, the fermentation of the Fino still uses large traditional oak casks, while almost everyone has switched to the use of stainless steel fermentation tanks. Like no other, it is realized that long ripening is essential for making quality sherry. A good Fino sherry matures for about seven or eight years before it has the properties that make this wine so beautifully salty and spicy. At Valdespino, the Fino is a wine with a lot of personality. And like the Fino, each of the sherrys of this house has its own personality, its own character, whether it be the Oloroso, the Amontillado or the Pedro Ximenez.
The base of the wines of this family business, which is led by Don Miguel Valdespino, lies in the 100 ha of own vineyards. The most famous is the 87 hectare Inocente vineyard, which is located in the Carrascal district. This vineyard is fully planted with the high-quality Palomino Fino grape, and forms the basis of the Fino that bears the name of the vineyard. An important quality factor in this vineyard is the age of the vines, which for the most part exceeds thirty years. Older canes provide wine with more character and concentration. Grapes are only purchased from other companies for some basic cherries.
After picking, the grapes are transferred to one of the company's historic bodegas. The most beautiful is located in the heart of Jerez de la Frontera: the Inocente bodega, located in an old monastery. A bodega where not much has changed since the 18th century. Anyone who is here will taste the special historic atmosphere of this unique sherry company. One does not wish to make concessions to modern times here. Valdespino wants to remain a traditionally operating sherry company, and assumes that there will always be enthusiasts who understand that nothing is more important than the quality of the wine.
