About Bodegas Valdespino
Bodegas Valdespino is one of Spain's oldest and most respected sherry producers, with a history dating back to the 13th century. Located in Jerez de la Frontera, the house is known for its traditional methods and extended aging. Valdespino uses only grapes from its own vineyards and remains faithful to the classic solera system that gives its wines their depth and complexity. El Candado is among their best-known and most beloved wines.
The name El Candado
El Candado means "the padlock" in Spanish. Each bottle was traditionally sealed with a small lock as a symbol of authenticity and quality. The name refers to the idea that this wine is so special that it should be preserved like a treasure.
Origin and climate
The wine comes from Jerez, the heart of sherry production in Andalusia. The region forms a triangle between Jerez de la Frontera, El Puerto de Santa María, and Sanlúcar de Barrameda. The soils consist of white, chalky albariza soil that retains moisture excellently. The climate is subtropical, with mild, wet winters and warm, dry summers. The combination of sun and sea breezes creates perfect conditions for grapes with concentration and freshness.
Grapes and vinification
El Candado is made from 100% Pedro Ximénez grapes. The grapes are harvested by hand and then sun-dried until they are almost raisin-like. This process gives the must an exceptional concentration of sugars and aromas. The wine is then aged for over ten years under oxidative conditions, which gives it its deep color, rich aroma, and smooth texture. The result is a sherry with the perfect balance of sweetness, power, and elegance.
Tasting note
The color is intense mahogany brown with copper hues. The nose reveals aromas of raisins, figs, caramel, coffee beans, and sweet licorice. The palate is opulent and velvety, with layers of dried fruit, mocha, and honey. The finish is long, silky, and harmonious. In the already traditional Jerez, with its historical bodegas and rich family trees, Valdespino is still a very traditional house compared to other bodegas, known for its historical background and traditional way of working. For example, the fermentation of the Fino still uses large traditional oak casks, while almost everyone has switched to the use of stainless steel fermentation tanks. Like no other, it is realized that long ripening is essential for making quality sherry. A good Fino sherry matures for about seven or eight years before it has the properties that make this wine so beautifully salty and spicy. At Valdespino, the Fino is a wine with a lot of personality. And like the Fino, each of the sherrys of this house has its own personality, its own character, whether it be the Oloroso, the Amontillado or the Pedro Ximenez.
The base of the wines of this family business, which is led by Don Miguel Valdespino, lies in the 100 ha of own vineyards. The most famous is the 87 hectare Inocente vineyard, which is located in the Carrascal district. This vineyard is fully planted with the high-quality Palomino Fino grape, and forms the basis of the Fino that bears the name of the vineyard. An important quality factor in this vineyard is the age of the vines, which for the most part exceeds thirty years. Older canes provide wine with more character and concentration. Grapes are only purchased from other companies for some basic cherries.
After picking, the grapes are transferred to one of the company's historic bodegas. The most beautiful is located in the heart of Jerez de la Frontera: the Inocente bodega, located in an old monastery. A bodega where not much has changed since the 18th century. Anyone who is here will taste the special historic atmosphere of this unique sherry company. One does not wish to make concessions to modern times here.
