the Valdespino winery and the historic sherry tradition

Valdespino is one of the oldest bodegas in Jerez. The family has worked in the region for centuries and is known for its consistent quality. The bodega owns important plots, including Pago Macharnudo Alto. This area enjoys high altitude, plenty of sunshine, and fresh air from the Atlantic Ocean. This combination produces grapes with structure and aromatic tension. Valdespino focuses on sherries in various styles, such as Fino, Amontillado, Oloroso, and Pedro Ximénez. The bodega uses its own vineyards to maintain control over aging and selection.

the Jerez region and the climate for sherry

Jerez is located in southern Spain. The region enjoys warm summers, mild winters, and a distinct oceanic influence. The albariza soil reflects sunlight and retains moisture, giving the vines a consistent growth rate. The grapes ripen fully yet retain their freshness. Sherry production uses the solera system, creating a stable, layered style. Each layer adds structure and flavor. The combination of sun, chalky soil, and controlled aging produces sherries with depth and balance.

characteristics of Valdespino Cream Sweet Sherry Isabela

Valdespino Cream Sweet Sherry Isabela is known for its warm style and full aroma. The wine is a blend of Oloroso and Pedro Ximénez, resulting in a soft texture and distinct aromas of ripe and dried fruit. This style appeals to connoisseurs seeking intensity without sacrificing structure. Traditional aging allows the wine to maintain a pure flavor profile.

grapes and origin of Isabela

The blend is 75 percent Palomino Fino and 25 percent Pedro Ximénez. The Palomino Fino comes from Pago Macharnudo Alto, the highest part of the region. The soil is Albariza, a structure that retains moisture and gives the grapes tension. The Pedro Ximénez adds sweetness and rich notes of raisins and prunes. According to the product sheet, the wine displays aromas of ripe fruit, dates, prunes, raisins, and chocolate.

fermentation and solera of Valdespino Cream Sweet Sherry Isabela

The Oloroso has undergone approximately ten years of oxidative aging. This period imparts color, depth, and nutty notes. The Pedro Ximénez is dried beforehand to concentrate the grapes. This is followed by a five-year solera. This additional aging gives the blend finesse and a long flavor profile. The solera method ensures a balance between young and older components. This results in a consistent style with broad aromas, as described in the product information: contentReference[oaicite:1]{index=1}.

color, smell and taste of the Isabela

The color is dark mahogany. The aroma offers notes of prunes, dates, raisins, and chocolate. The texture is soft. The flavor remains full-bodied without becoming heavier. The finish is long and concentrated. The combination of oxidative aging and the sweetness of Pedro Ximénez creates depth and warm notes.

In the already traditional Jerez, with its historical bodegas and rich family trees, Valdespino is still a very traditional house compared to other bodegas, known for its historical background and traditional way of working. For example, the fermentation of the Fino still uses large traditional oak casks, while almost everyone has switched to the use of stainless steel fermentation tanks. Like no other, it is realized that long ripening is essential for making quality sherry. A good Fino sherry matures for about seven or eight years before it has the properties that make this wine so beautifully salty and spicy. At Valdespino, the Fino is a wine with a lot of personality. And like the Fino, each of the sherrys of this house has its own personality, its own character, whether it be the Oloroso, the Amontillado or the Pedro Ximenez.

The base of the wines of this family business, which is led by Don Miguel Valdespino, lies in the 100 ha of own vineyards. The most famous is the 87 hectare Inocente vineyard, which is located in the Carrascal district. This vineyard is fully planted with the high-quality Palomino Fino grape, and forms the basis of the Fino that bears the name of the vineyard. An important quality factor in this vineyard is the age of the vines, which for the most part exceeds thirty years. Older canes provide wine with more character and concentration. Grapes are only purchased from other companies for some basic cherries.

After picking, the grapes are transferred to one of the company's historic bodegas. The most beautiful is located in the heart of Jerez de la Frontera: the Inocente bodega, located in an old monastery. A bodega where not much has changed since the 18th century. Anyone who is here will taste the special historic atmosphere of this unique sherry company. One does not wish to make concessions to modern times here. Valdespino wants to remain a traditionally operating sherry company, and assumes that there will always be enthusiasts who understand that nothing is more important than the quality of the wine.
