The Gruner Veltliner grapes come from a vineyard located on limestone with a clay covering. The bunches are destemmed, aged for eight hours, and then cold-soaked. Fermentation takes place in stainless steel tanks, with yeast contact until bottling, after which the wine matures/ages in barriques (225 liters) and larger oak barrels. In the glass, the New Chapter is a clear, light yellow with fantastic characteristics, including a low alcohol content of 13%, only 2.5 g/l of residual sugar, and a pleasant pH of 3.3. The nose reveals Austrian hills with soft, slightly smoky herbs, a hint of apple, guava, mango, and abundant yellow fruit. On the palate, it offers complex, elegant aromas of yellow pear, mineral notes (chalk, gravel), and a spicy, long finish.
