Fresh, slightly spicy and with subtle citrus notes, this alcohol-free creation knows how to surprise even the most seasoned connoisseur. Feral stands for rediscovering flavours and letting go of conventions. In their mission to reinvent food pairing, they create drinks that are as complex and layered as wine. For Nº1, this adventure starts with organic white beetroot. The juice is fermented with lactic acid bacteria and then macerated with hops and Szechuan pepper, resulting in an exciting balance between freshness, spiciness and subtle floral accents.

Feral is a fantastic alternative for those who either want something other than wine or prefer not to drink alcohol. This is not an 'imitation wine' but a white drink that can compete with a wine in terms of complexity (so many flavors and aromas that come forward with the swirling) and is therefore also very suitable to serve at the table, because this, as with wine, can be fantastically 'paired' with dishes

In the glass, the Feral No.1 White - Hop Szechuan Pepper Organic has a light lemon yellow color and is slightly cloudy. On the nose we smell fresh notes of citrus, a fine, spicy kick of Szechuan pepper and floral notes of hops. On the palate, the Feral is lively and fresh, with a soft balance between citrus-like acids and a subtle peppery tingle.

This Feral No.1 White - Hop Szechuan Pepper goes perfectly with grilled vegetables, steamed fish and refined salads with fresh vinaigrettes. Also surprisingly tasty with sushi or a ceviche with an Asian twist.

‘Feral’ – wild, ongetemd, terug naar de natuur. Deze naam is niet toevallig gekozen. In de Italiaanse Dolomieten omarmen de makers van Feral precies dit idee: het herontdekken van puurheid en het verleggen van grenzen. Als jonge startup van brouwers, wetenschappers en ‘foragers’ (verzamelaars) hebben ze één missie: de manier waarop we eten en drinken combineren opnieuw uitvinden met gelaagde, natuurlijk gefermenteerde alcoholvrije dranken. 

Het begint met eenvoudige, vaak vergeten ingrediënten zoals bieten. Het sap wordt gefermenteerd en vervolgens gemacereerd met zorgvuldig gekozen kruiden, specerijen en hout. Zo transformeren ze saaie sappen in gelaagde smaakbelevingen. Denk aan witte biet met szechuanpeper en hop, of rode biet met bosbessen en lavendel. Elke fles combineert natuur en ambacht, met de focus op smaak en balans. 

De naam Feral is een ode aan het wilde en ongetemde – een uitnodiging om het traditionele idee van pairing los te laten.
