Bodegas Senorans is located in Vilanovina, in the valley of the Rio Salnes, east of Pontevedra in the Rías Baixas. The estate was purchased in 1979 by Marisol Bueno (chairwoman of the Rías Consejo) and her husband Javier Mareque. A great deal of money was invested in replanting the vineyards. Everything was uprooted and replanted with Albarino grapes, which yield such stunning results here. In 1989, another substantial investment was made to completely renew the production facilities, thus gaining access to the latest and most modern equipment for wine production.
The first harvest was that of 1990. In 1992, the young and promising oenologist Ana Quintela was brought into the firm, and since then, the wines have maintained an upward trend in terms of quality every year. Pazo de Señorans is always the last to start the harvest. They harvest with a higher sugar content than the other Bodegas. This results in optimally and evenly ripened grapes, ultimately containing more aromas and flavors and less aggressive acidity. Harvesting is done exclusively by hand (which, incidentally, is the only possible method because the vines are planted in a pergola system), and the grapes are then selected by hand as well. They work with lower yields than elsewhere to achieve greater concentration and with a very slow fermentation. This is also the only way to age the wines, because although people in Spain prefer to drink Albariño only young, this particular Pazo de Señorans possesses excellent aging potential.
The bodega has recently started releasing older vintages (the 2009 and 2010) from their cellars back onto the market under the label: Pazo Senorans Collection. Substantially higher in price, certainly considering the limited number of bottles, but purely to demonstrate to the wine-loving public that with aging, this wine becomes even more special, with even better integrated fruit and acidity.
A beautiful, "full-bodied" Albariño, classic, slightly exotic, beautifully aromatic, with soft notes of pear, peach, grapefruit, a hint of honey, minerals, and fresh acidity. These influences are also reflected in the taste. The wine is delightfully fresh, and due to the good ripeness of the fruit, it even seems slightly sultry—mouth-filling, so to speak. The finish is long, intense, and complex. A lovely, fruity, and dry flavor profile with a mineral finish. A real winner when it comes to the Albariño grape! It is no coincidence that Ferran Adrià (formerly of El Bulli) selected this wine as one of his 'wines by the glass' for his new restaurant 'Tickets' in Barcelona.

Pazo de Señorans is located in the wine region of Rias Baixas which is located in Galicia, all the northwest of Spain and north of Portugal. This area is famous for producing Spain's best white wines, Rias Baixas' Albariño. Like many regions in Galicia, the soil here is also completely made of granite. The top layer consists of sand, mainly crumbled granite particles. This ensures that there is perfect water drainage from the soils. At low yields, the granite soils also ensure a nice minerality in the grapes.
