The stunning bottle alone is a must-have for any sunny occasion. But beyond that, the flavor is truly delicious and pairs wonderfully with gazpacho and fresh oregano. This is the Premium L'Hydropathe edition, using only the finest grapes. Domaine des Diables considers this exceptional wine the pinnacle of Provence rosé. It has already won several awards.

Night-harvested Syrah (60%) and Grenache are macerated separately with their skins for five hours in steel vats. After the fruit is pressed, the drained juice rests unfiltered for another week in sealed vats where oxygen cannot damage it. Compared to other MIP rosés, this one has been aged for four months. This slow maturation creates a very pure wine in which the characteristics of the various organically treated vineyards are clearly discernible. Once blended, Lucie has a refined aroma and taste of ripe red fruit. Its pleasant minerality and lingering finish distinguish it from its lighter counterparts. Therefore, this more complex rosé pairs more easily with spicy ingredients. For those who prefer a different color at the table, this Provence wine can always be served before dinner: it's hard to imagine a more beautiful aperitif than this one.

In Puyloubier, twenty kilometers east of Aix-en-Provence, at the foot of the Montagne Sainte Victoire, Michel Fabre founded Domaine Sainte Lucie in 1978. The Sainte Lucie vines, which average thirty-five years old, grow on a thin layer of calcareous sand and red clay soil, full of stones. This makes it essentially the only soil suitable for wine grapes. The grapes grown here are primarily the red Grenache and Syrah varieties, supplemented with some Cabernet Sauvignon, Mourvèdre, and, of course, Carignan and Cinsault.

Because the grapes on the estate enjoy optimal sun exposure, they can mature healthily and fully. In humid weather, the gentle mountain winds—of which the Mistral is perhaps the most famous—prevent mold and rot from taking hold of the bunches. This makes organic farming at Domaine Sainte Lucie an easy challenge. The estate's environmentally friendly approach naturally also impacts the wines of Domaine des Diables. They are fruity, elegantly spicy, floral, and pure. Add to that the modern bottle styles, and the rosés can be considered among the most tempting Provençal wines for any occasion and any occasion.
