2025 Tenuta Campo di Sasso Occhione Toscana Vermentino IGT is the only white wine from Tenuta Campo di Sasso, the Tuscan estate of the family behind the iconic Tenuta di Biserno. Like the rare bird from which it takes its name, Occhione is a rare sight. This Vermentino combines Mediterranean freshness with remarkable depth and refinement, demonstrating that the Tuscan coast can also produce white wines of international caliber.

Tenuta Campo di Sasso

Tenuta Campo di Sasso is part of Tenuta di Biserno, the prestigious estate founded by Lodovico Antinori, one of Italy's most influential winemakers and co-founder of the famous Super Tuscans from Bolgheri. The vineyards are located in Bibbona, directly north of Bolgheri, where the proximity of the Tyrrhenian Sea provides cooling and a long growing season. The combination of Mediterranean influences, sunny days, and stony coastal soils produces wines with ripe fruit, refinement, and striking minerality.

Occhione

Since 2019, Occhione has been the estate's only white wine and is produced exclusively in small quantities. The name refers to the rare bird that nests in the dunes of Marina di Bibbona, a symbol of the elegance and exclusivity of this wine. Like the estate's great red wines, Occhione possesses not only finesse and freshness, but also concentration, structure, and a remarkably long finish.

Vineyard and vinification

The wine is made from 100% Vermentino sourced from vineyards with sandy and gravelly soils, planted at a high density of approximately 6,500 vines per hectare. The grapes are harvested entirely by hand during the cool morning hours to preserve maximum freshness.

After the harvest, the grapes are immediately cooled to approximately 8 to 10°C and carefully selected. Only the free-flowing juice is used. Fermentation takes place in stainless steel tanks at controlled temperatures of up to a maximum of 16°C. Subsequently, the wine ages for thirty days on the fine lees with daily bâtonnage, followed by another two months of refinement in stainless steel. This method ensures extra texture and complexity, while fully preserving the pure expression of Vermentino.

The year 2025

After a relatively cool and wet spring, a warm June followed, while July was moderate with regular rain showers. A warm period in August resulted in an early, concentrated harvest, which took place about a week earlier than usual. Rain in September restored the desired balance, allowing the grapes to be harvested at optimal ripeness while preserving freshness and aromatic precision.

Scent, taste and character

Occhione has a bright straw-yellow color with light greenish reflections. On the nose, fresh citrus aromas dominate, complemented by refined Mediterranean notes of mint, sage, and other aromatic herbs.

On the palate, the wine is lively and juicy, with a beautiful tension between ripe citrus fruit, fresh acidity, and a subtle briny minerality. Aging on the fine lees imparts extra texture and depth, giving the wine more structure than many other Vermentinos. The finish is long, clean, and refreshing, with an elegant Mediterranean signature.

Drinking window and food and wine pairings

The 2025 Occhione is immediately delicious to drink, but will develop beautifully over the coming years.

Preferably serve the wine at 8 to 10°C.

Excellent with shellfish, grilled fish, seafood pasta, ceviche, sushi, Mediterranean salads, grilled vegetables, risotto with lemon or herbs, and refined dishes from the Tuscan coastal cuisine.

In 1995, Lodovico Antinori discovered the potential of an area on the outskirts of Bolgheri for viticulture. After an evaluation, he saw the unique characteristics of this area and was convinced that he could create something new and unique in the wine world. A few years later, the Antinori family (Piero, Lodovico, Ilaria and his son Niccolò) and landowner Umberto Mannoni started founding Tenuta di Biserno. Adjacent to the historic village of Bolgheri, with a beautiful view of the Tyrrhenian sea.

The Tuscan winery has 49 hectares of estate and is located in Alta Maremma in western Tuscany between the hills of Bibbona. Due to the specific soil and climate characteristics, the area is divided into two zones. The Bolgheri area has a subsoil of rock; on these 40 hectares, the vines for Biserno and Il Pino di Biserno are planted. The vines planted on the vineyards are mainly Cabernet Franc and Merlot and in smaller quantities Petit Verdot and Cabernet Sauvignon. Tenuta Campo di Sasso, on the other hand, has 56 hectares with mixed (and mainly) sandy soils. This area is close to the sea and is therefore very suitable for varieties such as Syrah and Vermentino. Occhione and Insoglio del Cinghiale come from this area.
