Antinori's most popular white restaurant wine is this amazing Chardonnay. Made in the Burgundy style and also known as 'Baby Cervaro'.
This 100% Chardonnay from the famous Super Tuscan producer Antinori is a golden-yellow wine with a bouquet of summer fruit and a pure Chardonnay character, with lovely hints of vanilla. The taste is soft, with a beautiful balance and a refined structure. The vines (100% Chardonnay) are planted at an altitude of 200 to 400 meters. The soil type is primarily clay with fossils. After harvesting, the first fermentation of the wine takes place in steel tanks, under a controlled temperature of a maximum of 10°C. After a few hours of fermentation, the must and skins are transferred to French oak barriques for further fermentation and aging. After 5-7 months, the wine is ready to be bottled.
The name Bramito means 'the roar of the stag in the rutting season'. Cervo is the Italian word for stag. Cervara was the nickname of one of the Monaldeschi family members who held sway over Castello della Sala around 1300.

The 2023 Bramìto della Sala is youthfully coy in the glass, opening with fleeting aromas of raw almond, white flowers, vanilla bean and spice. This is far more enticing on the palate, silken and round, with a core of zesty acidity to contrast. Ripe orchard fruits and minty herbal tones swirl throughout. Crunchy mineral tones and sour citrus define the finish. The 2023 tapers off long and mouth-watering, leaving a resonance of lemon custard to linger. Aromatically, the 2023 still needs time to develop, but with such a wonderful balance within, it will be time well spent.

Marquis Piero Antinori is in charge and is assisted by his three daughters: Albiera, Allegra and Alessia. Funny those three A's. In 1180, Ugo and Antinori di Rinuccino were officially named as owners of Castello di Combiate; a century later, the family who had moved to Florence were included in the register of the silk trade cooperative. In 1385, Giovanni di Piero, an indirect descendant, entered the wine guild as an apprentice. Since then, the wine-growing tradition of the Antinori family has been continuous. With the establishment of the Marchesi Antinori winery, the peak was reached in 1895 and already in 1898 the winery was built in San Casciano Val di Pesa, which is still the center of the widely branched group of properties in all major cultivation areas of Tuscany, Umbria. , Piemonte (since the early 90s through the purchase of the wine cellar Prunotto), Apulia and even California.
