The aptly named Spiegel is a true reflection of Styrian terroir—fresh, juicy, and the perfect summer sipper. It has a radiant straw yellow color with notes of gooseberry, freshly mown grass, nettle, and elderflower. The wine is youthful yet retains subtle and elegant herbal notes.

The grapes experience optimal ripening conditions, with both ample sunshine and a cool breeze in summer to prevent sunburn. The wine remains fresh while retaining complexity; an elegant minerality permeates the wine, complemented by fine, integrated exotic notes. To preserve and emphasize this unique character, alcoholic fermentation takes place in stainless steel tanks.

Weingut Polz is a fourth-generation family winemaker with a rich history rooted in the Southern Styria region. They focus on producing wines rooted in a sense of place, a reflection of the region and the grape variety.

Weingut Polz is located on the Grassnitzberg in Austria's southern wine region, Südsteiermark. This family business has a rich history that dates back to 1912, when Johann Polz took his first steps in viticulture. Today, the winery is run by the fourth generation, who continue to improve the quality of their grapes and wines with sustainable viticulture and modern technologies.

Although Austria is known for Grüner Veltliner, it is the Sauvignon Blanc grape that steals the show in Südsteiermark. About one fifth of the vineyard area in this region is planted with this grape variety. Sauvignon blanc thrives in the hilly landscape and the relatively mild climate with cool nights. The wines range from fresh and fruity to subtle and elegant.

Weingut Polz offers a wide range of wines, including the well-known Sauvignon Blanc, Weissburgunder and Morillon (local name for Chardonnay). All grapes are harvested by hand. The vinification takes place in stainless steel tanks or large wooden barrels. Everything is aimed at preserving the grape's own aromas and freshness.

In addition to making beautiful wines, Weingut Polz is also focused on sustainability and the preservation of biodiversity, and they try to minimize the impact of their winegrowing activities on the environment. They are currently in the process of converting to organic viticulture.
