Description
One Chain Vineyards is a beautiful boutique wine producer from Australia that prefers quality over quantity. This quality is achieved by using the finest grapes from the renowned wine regions of South Australia. One Chain Vineyards, like Thistledown, is overseen by Peter Leske, Giles Cooke MW and Fergal Tynan MW. One Chain works with growers to source fruit from some of the most established regions of South East Australia. Each wine has great varietal definition combined with our signature vibrancy and freshness. These are wines that are immediately enjoyable, yet authentically express the variety and place. The wines are inspired by a love of Australia’s national sport. Indeed, the name One Chain is the imperial measurement for 22 yards, or the length of a cricket pitch. However, you don’t have to be a connoisseur of the game to be impressed by the understated, elegant style of the Chardonnay and the bright red fruit and subtle oak of the Shiraz Cabernet.
The fruit for Googly Chardonnay is harvested at night when the weather is cooler and then immediately transported to the winery for pressing, ensuring minimal skin contact. Fermentation takes place in stainless steel tanks at controlled temperatures and the wine is then aged in used oak barrels for 2-3 months. This Chardonnay is sourced from cooler climate vineyards to produce a deliciously crisp white wine. Fresh, lively and bright, this citrusy Chardonnay is well balanced, with tropical fruit and melon on the palate before delivering a lively and surprisingly full finish.
Roasted or grilled chicken dishes
Examples: Chicken fillet with lemon and thyme, chicken thighs with garlic and rosemary or pulled chicken with a light barbecue sauce.
Why this is a good fit:
The round structure and ripe fruit of the wine complement the soft, juicy character of the chicken. The light spiciness of the dish is enhanced by the subtle spicy notes of the wine.
Fish dishes with a creamy or buttery sauce
Examples: Baked cod with lemon butter sauce, salmon with dill cream sauce or monkfish with a beurre blanc.
Why this is a good fit:
Chardonnay is a classic with fish and soft, round sauces. The creamy texture of the dish is nicely counterbalanced by the ripe fruit and the mild acidity of the wine.
Roasted vegetables or vegetarian dishes with a light creaminess
Examples: Roasted cauliflower with Parmesan, risotto with zucchini and lemon, or pasta with spinach and mascarpone.
Why this is a good fit:
The wine has enough body and fruitiness to hold its own with hearty vegetables, yet enough refreshment to balance creamy elements.
Salads with chicken, fish or soft cheese
Examples: Salad with smoked chicken and avocado, salad Niçoise, or salad with brie and peach.
Why this is a good fit:
The fresh acids of the wine go well with raw vegetables and vinaigrettes, while the fruity character makes the whole aromatically round.
Pasta with light cream or vegetable sauce
Examples: Tagliatelle with mushrooms and cream, pasta with grilled peppers and ricotta, or spaghetti with lemon pesto.
Why this is a good fit:
The wine supports soft creamy or slightly fatty textures, while the fruity character provides variety and tension in the dish.
