Justin Girardin is the 13th generation of a family business that has existed since 1570. The winery owns 17 hectares, the majority of which is in Santenay (Côte de Beaune). In that appellation, he pushes the boundaries of quality. For years, Justin has employed practices consistent with bio(-dynamic). The goal: a healthy environment with healthy grapes that reflect the terroir of the individual vineyards.

The Chardonnay grapes come from a plot in Meursault located in the Les Clous Dessous and Les Vireuils climats. The soils here consist of young marl and limestone. The vineyards are situated at the top of a sloping plateau and slope slightly to the east. The vines are 40 years old. The grapes are hand-picked and pressed as soon as they arrive in the cellar. Fermentation in stainless steel tanks takes place at a controlled temperature of 10 degrees to preserve aromas. Only natural yeasts from the local area are used during fermentation. Subsequently, the wine ages for 24 months in French oak barrels (from Allier and Bertanges), 25% of which are new. The wine ages on its own lees to add extra creaminess and complexity.

In the glass, the Justin Girardin Meursault is lemon-yellow in color, with delicate aromas of lemon peel, hazelnut, and butter on the nose. This Girardin Meursault is a very refined Meursault built on freshness, where balance predominates: judicious oak notes with beautiful acidity and good complexity. This fine Meursault is highly recommended. Naturally delicious with a multitude of dishes, but just try it with veal sweetbreads and morels. Delicious!

The goal: a healthy nature with healthy grapes that reflect the terroir of the individual vineyards. For that reason, he is also frugal with new oak barrels. Best of all are the extremely favorable prices for Burgundy, a rarity these days.

Justin Girardin is out in the vineyards as often as he can. He uses a minimal intervision: nature is leading and he only adjusts if necessary. He does this very carefully, by the way: remove buds to limit the yield, remove excess leaves where necessary.

Justin has been working for years according to methods that correspond to biological (-dynamic) working. For example, he plants new vines according to the lunar calendar, as is common in biodynamic viticulture. He covers prunings with soil, after which he reuses them as compost. He regularly plows the vineyards to promote micro-organism activity in the soil. Roots on the surface are gently removed so that the roots penetrate deeper into the soil, resulting in more intense wines.

Special is the wide variety of old Chardonnay and Pinot Noir clones in the vineyards. This promotes biodiversity. The clones originated in these vineyards and were preserved through clone selection. It makes the wines unique and really tied to their location.
