Description
Pecorino production almost disappeared due to very low production and previously lower quality. In 2005, Umani Ronchi and Velenosi took the initiative to give these indigenous varieties the place they deserve. Thanks to a lot of effort and love, the Pecorino is back on the highest podium in Abruzzo. The name of the Pecorino grape variety, also known as "sheep grape", is derived from the strong link between sheep farming and agriculture and the presence of this grape variety in pastoral areas. Vellodoro refers to the golden fleece of the sheep.
The Pecorino is currently seen as a special, original wine with yellow fruit and a clear mineral touch. The past of the grape, with its 80-year disappearance, is highly special and the Marche region can rightly be proud of the re-entry of the Pecorino wine onto the market.
The Pecorino grapes are picked by hand early in the morning or late afternoon and stored in small containers that are kept in cold cold rooms before being taken to the winery. After the harvest in mid-September, the grapes are carefully selected; After gentle pressing, the temperature is immediately lowered and fermentation always takes place in temperature-controlled spike (14-15 ° C) stainless steel barrels. The wine is aged until February/March at a temperature of approximately 10 ° C to obtain its beautiful aromas.
In the glass, the Umani Ronchi Pecorino Terre di Chieti has an intense and radiant straw yellow color. On the nose the wine is pleasant with scents of exotic fruit, a floral bouquet of hawthorn, acacia with some boxwood, apple and citrus.
