All Tony Bish wines are produced in vineyards certified under the New Zealand sustainability scheme. The vines are managed sustainably without the use of pesticides. The harvested fruit is gently destemmed without crushing the grapes. After the juice has settled, it is transferred to large, 9hL French oak barrels for further maturation.

The Tony Bish Fat & Sassy Chardonnay has a full, broad nose with refreshing, bright aromas of ripe yellow stone fruit and citrus, along with a creamy, nutty edge of barrel fermentation and spicy oak, subtle lemon curd and buttery notes. The palate has citrus aromas fused with creamy barrel fermentation and nutty, spicy oak. The mouthfeel is enriched by integrated layers of lemon and some vanilla. The palate has an underlying freshness with acidic balance, and the wine flows along a finely textured line with creamy, nutty notes leading to a lingering, toasted oak finish. This is a lovely aperitif wine, but also makes an excellent accompaniment to rich salads and shellfish.

ABOUT TONY BISH

It was the early 80s when Tony Bish began his journey with wine. He had little money at the time, but with the little he did have he went skiing on Mount Hutt. Here the first vintage with Corbans in Gisborne was a pragmatic start to what has become a passionate career for forty years. Six years later Tony graduated with a Bachelor of Applied Science in oenology. At that stage Tony's new knowledge and experience were already called upon. In 1986 he founded Sacred, Hill Wines in Hawkes's Bay together with the Mason brothers. Here Tony consciously made the choice to continue with the Chardonnay grape only................ Here, the first vintage with Corbans in Gisborne was a pragmatic start to what has become a forty-year passionate career. Six years later, Tony graduated with a Bachelor of Applied Science in oenology. At that stage, Tony's new knowledge and experience was already called upon. In 1986, together with the Mason brothers, he founded Sacred Hill Wines in Hawkes's Bay. Tony makes a conscious choice to continue only with the Chardonnay grape. He and Karryn launched Tony Bish Wines in 2013, and they now sell four chardonnay styles directly to other chardonnay lovers across the country and around the world. Tony's creative spirit was unleashed in 2013, after a trip to South America, where he made wine that was produced in egg-shaped tanks. With some ingenuity and local know-how from Hastings-based NZ Tanks, Tony built the first concrete egg fermenters in New Zealand.
