Paul Cluver is a household name with all his wines and is a grandmaster, especially of white wines such as Chardonnay (who doesn't know the Seven Flags?), Sauvignon Blanc, and Riesling, and of course the beautiful, almost Burgundy-like Pinot Noir.
Thanks to the unique climate of Elgin, Paul Cluver is able to produce wines with an exceptional acid balance and an almost European style. The Paul Cluver Estate Chardonnay is a beautiful cool-climate Chardonnay from Elgin. The nose is characterized by subtle oak. Further notes of citrus and some blossom. On the palate, fresh acidity and a somewhat creamy finish. A delicious cool-climate Chardonnay supported by subtle oak.

From a rainy vintage, the Paul Clüver 2023 Elgin Estate Chardonnay is whole-bunch pressed and 100% barrel-fermented, maturing for 10 months on fine lees in a mix of first-, second-, third- and fourth-fill barrels, with around one-third new oak. Fermentation begins naturally without inoculation, and while malolactic is not encouraged, it is not prevented. Linear and cool in profile, the wine reflects Elgin’s marine influence and Bokkeveld shale soils through natural acidity and mid-palate tension, offering clarity and restraint. Total production is 11,344 bottles.

Paul Cluver is located in Elgin, one of the coolest regions of South Africa. Paul Clüver is originally an apple company, but since 1986, on the initiative of owner Paul Clüver, also a wine company. Due to its location in a very cool area, directly by the sea, wines are made here with a remarkable finesse and freshness. Third generation starts with wine. The estate of the Clüver family, De Rust, was acquired in 1896 by the grandfather of the current owner, Paul Clüver.
Soil samples were taken during the 1980s, which showed that viticulture was perfectly possible here. It was then decided to replace part of the apple orchards with vineyards. It was initially agreed to process the grapes into wine on the Nederburg Estate, one of the
most famous houses of the Cape. The first grapes were planted in 1986: Sauvigon Blanc, Chardonnay, Gewürztraminer and Weisser Riesling. The latter grape has been planted to make sweet wines with the help of noble rot. The estate's wines are now entirely made in-house to give them their own character. Andries Burger, the winemaker of Paul Clüver, is responsible. Dr. Paul Clüver himself is still involved in his own profession: neurosurgery.
