2023 Domaine Evenstad Bourgogne Blanc Aux Argillières
How does this wine taste?
How full and heavy the wine feels in your mouth, like the difference between skimmed milk and cream. More alcohol, sugar and oak ageing make a wine fuller.
How much sugar you taste, from dry to sweet. Fruity is not the same as sweet: a dry wine can taste of ripe fruit.
How fresh and juicy the wine is: acidity makes your mouth water. High acidity tastes lively and refreshing, low acidity soft and round.

Log inOrigin and history of Maison Evenstad
Maison Evenstad is the Burgundian chapter of the Evenstad family, known for the renowned Domaine Serene in Oregon, United States. Their passion for Pinot Noir and Chardonnay brought them to the Côte d'Or, where they acquired Domaine Christian Confuron and transformed it into Maison Evenstad. From the historic heart of Burgundy, they produce refined wines with deep roots in the local terroirs. The vineyards are located in iconic villages such as Nuits-Saint-Georges and Premeaux-Prissey. Here, the grapes benefit from a continental climate with warm summers and cool nights, ideal for preserving freshness and aromas.
The Aux Argillières vineyard and its unique terroir
The Aux Argillières climat is situated at the foot of the Côte de Premeaux-Prissey. The south-facing slope of over 5% guarantees excellent ripening. The soil consists mainly of white marl and limestone, which provides the mineral expression in the wine. The Chardonnay vines are deeply rooted here and are optimally nourished by the calcareous profile of the soil.
Grapes, harvest, and vinification of this Bourgogne Blanc
This wine is made from 100% Chardonnay. The grapes for this cuvée were harvested on September 4, 2022. Thanks to the warm growing season, early flowering, and favorable rainfall in late June, the bunches were able to ripen perfectly. After the manual harvest, the wine was aged for 14 months in oak barrels, 20% of which were new. This gives the wine structure and subtle wood notes without overpowering its fresh character. The wine was bottled on April 10, 2024.
Taste profile of the Bourgogne-Blanc Aux Argillières
This wine presents itself as clear and light gold in the glass. On the nose, aromas of citrus dominate, complemented by floral notes and a saline undertone. On the palate, the wine is crisp and lively with a fresh acidity profile. The finish is long and mineral, with hints of iodine typical of the vineyard's calcareous soil. The alcohol content is 13.5%, and the wine is bottled under the 'Régionale' classification with a production of 1,744 cases.

Food and wine pairings with this Bourgogne Chardonnay
- Grilled sea bass with lemon butter: the salinity and citrus accents pair perfectly with the fresh acidity of the wine.
- Risotto with green asparagus and Parmesan: creaminess and vegetable notes complement the mineral freshness of the wine seamlessly.
- Chicken supreme with tarragon and cream sauce: the creamy character of the sauce is balanced by the tension in the wine.
- Tagliatelle with fennel and lemon: the fresh anise notes and citrus elements enhance the aroma of the wine.
- Scallops with cauliflower cream and hazelnut: texture and umami are supported by the complexity of the wood aging.
- Pan-fried lobster with beurre blanc and dill: the luxury of the lobster and creamy sauce resonate beautifully with the subtle woody notes of the wine.

Wine features
Maison Evenstad: Négociant-activiteiten – wijn gemaakt van aangekochte druiven of most.
Locatie: Gebaseerd in Santenay, in de Côte de Beaune.
