Pouilly-Fumé owes its name to Pouilly-sur-Loire, the heart of the AOC, and 'Fumé', literally 'smoked', referring to the local name for Sauvignon Blanc, 'blanc fumé'. Here, the term fumé refers to the ash-grey colour of the leaves of the Sauvignon Blanc. Pouilly-Fumé wines are generally dry, fresh, and balanced, floral and fruity, with a striking minerality in which 'silex' (flint) is often recognizable. Since the end of the eighteenth century, the Lafond family has owned the largest and most renowned vineyards of Pouilly-Fumé. After a challenging period of the French Revolution, the efforts of Comte Lafond were continued by his great-grandson, Baron Patrick de Ladoucette.

The Baron added a rare cuvée to the range: the Baron de L. This wine is recognized as one of the best Sauvignon wines in the world, a wine produced only in the best vintages. The vineyards are located in Pouilly-Fumé Contrôlée, encompassing Pouilly-sur-Loire, Saint-Andelain, and Tracy-sur-Loire on the eastern side of the Loire Valley (including the vineyard of the Château du Nozet estate). The grapes grow here on Vieilles vignes, vines at least 40 years old.

The soil of the Pouilly Fumé vineyards is partly composed of marl (dating from the Kimmeridgian era) and rich in clay lying over a layer of limestone and shells, and another part that is clayey flint, a very old soil dating back to the first and second Jurassic periods (145 million years old). The average age of the vines is between 25 and 35 years old.

After the manual harvest, only the juice from the first pressing is used. The harvest from different plots is vinified separately. Following fermentation in tanks, a process takes place that makes this Pouilly-Fumé so special. The wine rests on the lees for three to six months. After this, the wines from the best plots are blended and then rest together on the lees for another eight to ten months. The old vines, the unique soil, and the special vinification process give this Ladoucette Baron de L Pouilly-Fumé an extremely elegant, rich, and aromatic character. This wine is recognized for its finesse and exceptional aromatic power and can be found on the tables of the greatest stars and in the finest cellars in the world.
