about Château Constellation
Château Constellation is located in Sion, the heart of the Swiss wine world. It is one of the few estates in Valais officially bearing the title of "Château." The vineyards are situated on spectacular terraces between 450 and 1,100 meters of altitude, where slate and granite dominate the soil. The winery combines centuries-old tradition with modern precision. Every detail, from hand harvesting to temperature-controlled fermentation, is focused on purity and balance. Château Constellation operates sustainably and carries the Swiss Vitival certificate, guaranteeing respect for nature and terroir. Under the leadership of Michel Rolland, international consultant in oenology, the estate achieves consistent, internationally recognized quality.

The Johannisberg de Chamoson comes from old vines, averaging 50 years old, planted on the steep terraces below the Haut de Cry in Chamoson. The vineyard lies between 500 and 580 meters in altitude, with a clay-limestone soil rich in minerals. This structure creates freshness and tension in the wine. Chamoson's microclimate, with abundant sunshine and dry mountain air, produces grapes with intense aroma development. The yield is limited to 850 grams per square meter, resulting in concentrated juice with plenty of character.

The wine is made from 100% sylvaner, known locally as Johannisberg or Blanc du Rhin. This variety is a natural cross between Heïda and Traminer, resulting in a combination of freshness, spice, and aromatic depth. Since 1966, Johannisberg has been officially protected within the AOC Valais and is among Switzerland's most respected white wines.
vinification and maturation
After a slow and gentle pressing, fermentation takes place at a low temperature (18°C) to preserve the fine aromas. The wine then matures for eight months on the lees in steel vats, during which partial malolactic fermentation takes place. This gives the wine length, creaminess, and complexity without losing its freshness. The result is a harmonious wine with tension, minerality, and subtle roundness.
