The Castro Ventosa winery
Castro Ventosa is the family project of Raúl Pérez, one of Spain's most influential winemakers. The estate is located in Bierzo, in the village of Valtuille de Abajo, and works almost exclusively with very old vineyards. The focus is on local grapes and minimal intervention in the cellar. Cepas Centenarias is one of the house's most characterful cuvées and comes from vines that are often over 100 years old. Production is small and heavily dependent on the vintage. Origin and terroir in Bierzo
The Mata Los Pardos vineyard is located in Valtuille and consists of sandy and clay soils with underlying slate. This combination ensures both finesse and structure. Bierzo has a transitional climate between Atlantic and continental. This provides fresh acidity, but also sufficient ripening. Old vines with low yields ensure concentration here without becoming heavy. The location and soil provide a pronounced mineral note and great precision in the fruit.
Grapes and vinification
The wine is primarily based on Mencía, supplemented by small percentages of local varieties such as Alicante Bouschet, Bastardo, and a small fraction of white grapes. This is typical of old vineyards in Bierzo, where different grape varieties are planted intermingled. The grapes are harvested by hand and ferment spontaneously with natural yeasts. A portion of the bunches is fermented whole, which provides extra structure and tension. Maceration is long and gentle. Subsequently, the wine ages for approximately 12 months in used French oak barrels. The wine is bottled unfiltered to fully preserve the character of the vineyard.
Style and taste profile
The 2023 opens with refined aromas of cherry, violets, and lavender, complemented by subtle spiciness and a light earthy undertone. In the glass, the wine continues to develop, with nuances of red fruit, graphite, and an elegant, cool tension. The structure is compact and precise, with fine yet present tannins and a lively acidity that provides energy. Despite the depth, the wine remains refined and drinkable. The finish is long, mineral, and slightly spicy, with a beautiful balance between power and finesse.
Food and wine pairings
This wine comes into its own with roasted poultry, lamb, or mushroom dishes. It also works excellently with charcuterie or lighter game dishes. Thanks to its fresh acidity and fine structure, it is more versatile than many more powerful Spanish red wines. Chilling lightly, around 14 to 16 degrees, adds extra tension.
Summary

The old-vine cuvée 2023 Valtuille Cepas Centenarias was their first grand vin in 1999, but in the last few years, it has been produced with the field blend found in a single plot in Mata Los Pardos, which has up to 5% Trousseau, on clay and sandy soils. It fermented with 30% full clusters and indigenous yeasts in an oak vat with a 45-day maceration and matured in 225- and 500-liter oak barrels for 12 months. It has more ripeness than other 2023s, 13.16% alcohol, and balanced acidity, but this is a very complete wine, combining power and elegance. It has depth and complexity and is one of the most serious wines from the vintage, also very clean. 4,100 bottles and 36 magnums were produced. It was bottled in May 2025.
Castro Ventosa, the winery from the Pérez family in Bierzo, keeps working on the zoning and site orientation of their wines. They are using more and more 500-liter barrels, looking for more finesse and elegance in their wines. They produce between 200,000 and 300,000 bottles from their 85 hectares of vineyards in Valtuille de Abajo plus one hectare of Godello in Cabañas Raras.
After the very warm and dry 2022, 2023 was a cooler vintage with rain at the beginning of the harvest. The wines have a floral, serious and elegant profile with a contained alcohol content of 12.5% to 13%. In the years when it rains during the harvest—which is more and more of a rarity, but it was the norm in the past—the wines are finer-boned, and in the warmer years, the wines are darker, in all senses.
This is a project that tends to be overlooked, but it deserves as much attention as the personal project from Raúl Pérez and his nephew César Márquez, as it has the hand and experience of both and the backbone of the family vineyards. The wines are very clean; the whites are a little more reductive, but the reds have lots of purity and are homogeneous and very representative of their birthplace. They have some of the best vineyards in the village, and these are some of the best wines they have produced, with precision and cleanliness.

More restrained on the nose, with elderberry, dried flowers, herbal tones, and an earthy, tile-like note. The palate is medium to full-bodied, with firm yet fine-grained tannins. Focused and chiseled, it shows structure and seriousness, yet carries a candid, pleasant undertone. This comes from a sandy clay soil in Mata los Pardos. This is fermented with partial whole cluster. Drink now or hold.

The 2023 Valtuille Cepas Centenarias is 100% Mencía from Valtuille. It opens with lavender and cherry aromas in a delicate, precise expression, later revealing a subtle peach nuance. Medium-bodied and compact, this carries gripping tannins and vibrant flavor. Seemingly simple now, it should evolve beautifully in bottle. I tasted the 2023 just two months after bottling.

Raúl Pérez is without a doubt the most mediatic winemaker in all of Spain today. However, his wines are almost impossible to find! Everyone talks about it, but few have already tasted them. Raúl is present in numerous appellations and regions, not only in Spain, but also in South Africa, Portugal, South America.
We have been following Raúl since 2000; at that time he was still working as an oenologist at the Castro Ventosa family estate in Valtuille de Abajo. He also worked as an oenologist-consultant for other domains in Bierzo. He refined the Mencia to unprecedented heights, also helped Ricardo and Alvaro Palacios start their top domain, while constantly tasting and trying other wines from around the world. Raúl is a restless nature and his curiosity and passion take him further and further.
Between 2005 and 2007 he left the family domain and left for a wine odyssey. In a few years he made a name for himself and became a real 'star' in the wine world. The common thread in his work is the recovery of vieilles vignes from indigenous grape varieties and the making of authentic wines with a lot of character and personality. Or to put it in his own words, "I'd rather make an undrinkably bad Galician wine, but at least let it be a Galician wine." He has therefore already vinified dozens of wines in countless different regions (mostly in the northwest of Spain, and also beyond), but which have never been marketed. He tests, he tries, and often fails. Of course, this way of working brings him a lot of experience, with which he will later be able to get the most out of one grape variety or one region.
Today he makes or contributes to more than 80 wines. In the end, he more or less settled himself by renovating two of his own mini-bodegas: one in the Tierra de León region, in the village of Valdevimbre, and another in his native Bierzo, where he is in the village of Salas de los Barrios. own Ultreia's, the absolute essence of Mencía. Raúl always works organically and as pure as possible. It uses the minimum of SO2. The wines we get from him are always in minimal quantities and we hardly ever know what we are going to get, from what year and how much ... That is Raúl in all.
