Description
Thelema Mountain Vineyards is located on the southeastern side of the Simonsberg, with vineyards at an altitude of 530 meters above sea level. These are considered some of the highest elevations in Stellenbosch - the high elevation and soil profile are ideal for the production of premium wine grapes. Thelema believes that the quality of the grapes is the single most important factor in making a serious premium wine.
The Thelema Mountain White is a lively and aromatic wine and shows delicious scents of passion fruit and gooseberry, with subtle hints of apricot and melon. The taste is medium bodied, with a refreshing aftertaste. The 90% Sauvignon Blanc provides a natural acidity and fruit-driven profile, while the 10% Viognier adds weight and complexity. Fermentation takes place at 14°C to ensure a more fruity, fresh final wine. The Sauvignon Blanc and Viognier are fermented separately and remain on the gross yeast for a maximum of 5 months. After both wines are complete, the complicated blending process can continue. After much testing, the winegrowing team decides on the final blend and can proceed to bottling.
