Domaine Jean Collet is a family-owned estate located in the heart of Chablis for generations. It was founded in 1952 by Jean Collet, who even then had a reputation for carefully managing his vineyards and producing wines with a distinct sense of terroir. Today, the estate is run by his son and grandson, Gilles and Romain Collet. Romain represents the new generation of winemakers who combine tradition with modern insights into sustainability and vinification.

The estate boasts approximately 40 hectares of vineyards spread across various Chablis appellations, including Petit Chablis, Chablis, Premier Cru, and Grand Cru. The family works with respect for nature and increasingly uses organic principles in their vineyards. Their goal is to produce wines that are honest, expressive, and balanced—true representatives of their origins. Domaine Jean Collet is therefore one of the most authentic Chablis producers, remaining true to the classic style: mineral, refined, and elegant.

Chablis is located in the northernmost part of Burgundy, close to the Champagne region. The climate is cool and continental, with significant variations between day and night temperatures. These conditions produce grapes with crisp acidity and slow, balanced ripening. The soil is what makes Chablis so special: the chalky Kimmeridgian soil, rich in fossil shells and clay, gives the wines their characteristic salty minerality and tension.

The vineyards of Domaine Jean Collet vary in orientation from south-facing to southeast-facing slopes, allowing the grapes to optimally enjoy the sun. The 2021 harvest in Chablis was notoriously challenging, with late frost and cooler conditions limiting yields. However, this yielded grapes with an excellent balance of ripeness and freshness – a perfect foundation for a classic Chablis. Domaine Jean Collet hand-harvests the Chardonnay grapes to optimally preserve the fruit's quality. The grapes are gently pressed, after which the juice ferments slowly in stainless steel tanks.

Part of the wine is then aged for several months on the fine lees, which adds texture and depth without sacrificing its freshness. Barely any oak is used, preserving the pure character of the Chardonnay and the minerality of the terroir. This approach results in a wine that is taut, clear, and complex, with subtle nuances typical of the house's style.
