The Colore is the flagship and top model Bibi Graetz and is actually a single-vineyard wine as more than 90% of the grapes come from old vines (these are majestic plants from 80 to 135 years old) at high altitude in the Lamole where Bibi has five hectares. The Colore is a wine with structure and backbone with intense red berries, red cherry, ferruginous earth, ground flowers and some fragrant herbs. What intense aromas of cherries and raspberries that, after some time in the glass, change into flowers, roses and orange peels. This is really full and powerful with layers of ripe tannins, with beautiful length and intensity.

The Colore is a Sangiovese wine made from some of the oldest and rarest vineyards in the region. The Sangiovese gives the wine structure and strength. Only the best few barrels from the entire production become Colore. Colore's grapes were hand-picked from 4 vineyards: Lamole, Vincigliata, Olmo and Sienna. Each vineyard was harvested up to 8 times and the grapes are each hand-harvested at the correct point of ripeness. After the first selection in the vineyard, a second selection takes place at the winery before destemming. At this stage the berries were gently pressed and placed into open top barriques, great care being taken to keep each parcel separate. The fermentation is carried out by indigenous natural yeasts (i.e. the yeasts on the grape) with 6 to 8 manual puchdowns per day, without temperature control for 2 weeks with 1 additional week of maceration on the skins. After fermentation, the wine is moved to new barriques, where malolactic fermentation takes place. The wine matures for 3 years before being released onto the market.

Give the Bibi Graetz Colore Sagiovese time to hatch and fully open and our advice is not to open it until around 2024, although it would be very nice to try the development with a Coravin.

“Colore really is our maximum expression. When you taste Colore the first thing that comes out is the flowers. It's an explosion of the senses. It's like spring. You go into the fields and you have perfumes, energy, power, beauty, sunshine...You have everything! And it's all in the Colore 2021.” - Bibi Graetz

More information about Bibi Greatz

Bibi comes from a family of artists, until he himself decided to take a different path and left the winemaker profession behind. He bought an 8 hectare vineyard with 60 year old vines. Today Graetz is one of the biggest names in Tuscany. The labels on the bottles show that Bibi Graetz comes from an artistic family, as he painted the images on the labels himself. The wines are rare and limited. Testamatta production from just 10,000 bottles per year.
