Description
The Colore is the flagship and top model Bibi Graetz and is actually a single-vineyard wine as over 90% of the grapes come from old vines (these are majestic plants of 80 to 135 years old) at high altitude in the Lamole where Bibi has five hectares. The Colore is a wine with structure and backbone with intense red berries, red cherry, ferrous earth, crushed flowers and some fragrant herbs. What intense aromas of cherries and raspberries that after some time in the glass change into flowers, roses and orange peel. This is really full and powerful with layers of ripe tannins, with beautiful length and intensity.
The Colore is a Sangiovese wine made from some of the oldest and rarest vineyards in the region. The Sangiovese gives the wine structure and power. Only the best few barrels of the entire production become Colore. The grapes for Colore were hand-picked from 4 vineyards: Lamole, Vincigliata, Olmo and Sienna. Each vineyard was harvested up to 8 times and the grapes are each hand-harvested at the right point of ripeness. After the first selection in the vineyard, a second selection takes place at the winery before destemming. At this stage the berries were gently pressed and placed in open-topped barriques, with great care taken to keep each parcel separate. Fermentation is carried out by indigenous natural yeasts (i.e. the yeasts on the grape) with 6 to 8 manual pushdowns per day, without temperature control for 2 weeks with 1 additional week of maceration on the skins. After fermentation, the wine is transferred to new barriques, where malolactic fermentation takes place. The wine matures for 3 years before being marketed.
Give the Bibi Graetz Colore Sagiovese time to mature and fully open and our advice would be to not open it until around 2024/2025, although it would be great fun to try the development with a Coravin.

The Bibi Graetz 2021 Colore is Sangiovese from old vines, but otherwise, winemaking and the oak regime is identical to the other top red, Testamatta. In this case, fruit comes from the Lamole area with vineyards at a high 600 meters above sea level. Some are south-facing but high up on the mountain. As Bibi explains: “Colore delivers power and freshness, whereas Testamatta delivers transparency and freshness.” The Colore shows the pure energy and liveliness of Sangiovese with violet, wild cherry and orange zest. The wine delivers an elegantly earthy side with a very delineated mouthfeel driven by very fine, silly tannins. This is a beautiful wine with delicately sweet cherry on the finish. Bibi has been making little changes to this wine over the years (other than giving it a new winery home in Fiesole) to capture an ideal or benchmark for Sangiovese. His 2021 is his best wine yet. Production is 35,000 bottles, which is slightly lower compared to the last vintage.
This is an impressive and controversial set of new releases from the Maverick of Fiesole (Tuscany), Bibi Graetz. I found both his new releases of Colore and Testamatta to be exceptional. Thanks to a new winery (built cleverly inside an old hotel) and beautiful new vineyard sites, some with old vines, these are surely the best wines he has made. Bibi is more committed than ever to creating expressions of elegance with Sangiovese and local Tuscan grapes. He is also presenting three new wines this year as part of his Balocchi series. “Balocchi” is an Italian word for “playfulness” or “game making,” but it also implies a hint of mischievousness. The three wines are what he calls a “component tasting” because each headlines an important indigenous grape from Tuscany. Balocchi N. 8 is Canaiolo, N. 1 is Sangiovese and N. 3 is Colorino. “I was inspired by the real wines of Tuscany made with old vines like we saw in the 1940s and 1950s,” says Bibi Graetz. Tuscany can stand up to the best wines of the world, and its true winemaking DNA is found in these grapes that were sadly abandoned and replanted when Italy embraced industrial winemaking in the 1970s and 1980s. This is my tribute to those grapes, and in a sense, these wines take us back years to where we started.” The three Balocchi wines do indeed showcase elegant expressions of each grape. However, I am disappointed in the outrageous pricing that makes these wines so utterly unaffordable and unobtainable. The pricing philosophy is difficult to understand. There are 2,000 bottles of each, or 6,000 bottles in the entire series.

The Bibi Graetz 2020 Colore is a pure expression of Sangiovese all sourced from old vines that are carefully selected in various parts of Tuscany. Much of the fruit comes from a high elevation and cool site in Lamole, or from 70-year-old vines in Bagno a Ripoli or Vincigliata near Fiesole. A small percentage of old vines in Olmo is also used. Bibi has a preference for old vines, and you can taste the lovely depth and complexity that comes through in the Colore. Compared to his other wine Testamatta, this wine has seen fewer stylistic changes over the years, and the goal has always been elegance and finesse. Colore boasts a pretty luminous quality with dark fruit aromas and wild berry. There are hints of licorice and mint as well. Mineral flavors and bright acidity are what set Colore apart.

Just love this wine, the lyricism and the generosity of it, and its always vivid depiction of fruits and stones. So juicy, so drawn out, works with the vintage, leans into its low yields, with greengages, raspberry, plum, gentle spices, lemongrass, minerality studded with mandarin peel and sage. Translucent and yet full of flavour, once again it begs you to draw up a chair, gather friends, and enjoy. What a brilliant wine and a brilliant winemaker in Bibi Graetz. From a 58ha estate, Colore comes from the oldest vineyards of Sangiovese that range up to 135 years old.

Another excellent wine from Bibi Graetz made from selected old-vine Sangiovese. Herbal and spiced on the nose, fragrant but with savoury aspects rather than overtly floral or fruity. Intense and direct, this hits you square on, with energy and forward motion. So sleek and well defined, smooth yet lively and energetic with tannins that are so beautifully executed. Almost plush and chewy giving weight and texture to the palate while actually being quite light and aerial overall. Complex and invigorating, fresh and wild at the same time - I love the character, it's pure but with a sense of authenticity that encapsulates the terroir and winemaking philosophy so wonderfully. Ends with a minty, liquorice, spiced blackcurrant and cool cherry element that is extremely moreish!

The 2021 Colore, 100% Sangiovese, is medium garnet-purple in color. After a little swirling, a glorious perfume of raspberry coulis, Morello cherries, and rose oil emerges from the glass, followed by hints of cinnamon toast, Sichuan pepper, and underbrush. The medium-bodied palate is coated with vibrant red berry and floral layers, framed by exquisitely ripe, fine-grained tannins and bold freshness, finishing epically long and fragrant. This is absolutely stunning!

The Bibi Greatz winery was founded in 2000 in the town of Fiesole in Tuscany. Bibi Graetz is considered one of the most talented winemakers in Tuscany.
