2020 Venus La Universal BIO

Sara Pérez is the wife of Rene Barbier who makes the famous Clos Mogador, Espectacle and Manyetes. Sara Pérez is also in charge of the Clos Martinet family estate. She also works closely with her brother Adria at Cims de Porrera. Father JoséLuis Pérez, one of the important figures in the Spanish wine world, is proud of his children. He remains active in various wine projects. Together with her husband René Barbier (Clos Mogador), Sara Pérez owns and vinifies two beautiful wines at Venus La Universal. As a tribute to every small food manufacturer from the 1920s who wanted to grow big, Sara has named this mini-domain Compania Universal de Vinos. There at 'La Uni', as she likes to call it, she created almost the mother of all feminine wines: Venus. And 'Dido' is the more than exemplary daughter of 'Venus'. New is the Dido Blanco, a complex white wine based on Macabeo and Garnacha Blanca, with partial fermentation in French oak. The wine deserves some bottle aging and is best served in large glasses. Elegant 'feminine' wines with lots of style.

The Venus is La Universal's top model. Only around 6,000 bottles are produced and global importers receive a small allocation of this fine wine every year. As Sarah herself describes it, the Venus is the result of an attempt to interpret femininity, the earth, through a bottle of wine: Here too, local grapes such as Carinyena (Carignan), Garnatxa (Grenache) and Syrah are used from the strong belief that the historic local grapes belong to a terroir and that is where the best results are produced.

The wine comes from 4 plots of Grenache and Carignan from old vines located between Pinyana and Crossos. The vineyard has both a northern and southern location (so warmth and coolness). The grapes are harvested separately, selected and processed separately, but ultimately (and this is unique with this wine) they try to ferment everything at the same time. The wine is fermented for no less than 28-32 days in wooden open tanks of 500 liters. After fermentation, the wine is allowed to mature further in a 4000 liter barrel and a 300 liter barrel (this is combined during bottling) for 20-24 months.

In the glass, the Venus has a sparkling ruby red color with dark fruit and spices on the nose. The taste is mineral, lush and juicy with a great balance between the fruit and the acids. This is a beautiful elegant wine and a wine that envelops you, it is delicious, intended for accompanying food, especially for traditional Mediterranean cuisine or with a nice piece of grilled meat. Of course honest and organic, because that is how this wine is made.
