2020 Domaine Joannès Violot-Guillemard Meursault Les Meix Chavaux is a classic Meursault from one of the most beautiful lieux-dits of the appellation. Les Meix Chavaux is situated directly above the famous Premier Cru Genevrières and is known for its chalky soils and cool location. As a result, this vineyard produces wines with more tension and minerality than the richer style for which Meursault is often known. The 2020 combines the creamy texture of Meursault with striking freshness and precision.

Domaine Joannès Violot-Guillemard

Domaine Joannès Violot-Guillemard is a small family estate in Pommard whose history dates back to the nineteenth century. Today, the estate is managed by Thierry Violot-Guillemard, who continues the family tradition with a classic Burgundian wine style in which terroir, finesse, and elegance take center stage. The vineyards are cultivated sustainably with a strong focus on low yields and healthy grapes.

Les Meix Chavaux

Les Meix Chavaux is situated on the northern side of Meursault, directly above the prestigious Premier Cru Les Genevrières. Thanks to the higher elevation and the stony limestone soil, the grapes develop a beautiful tension and pronounced minerality. Many enthusiasts consider Les Meix Chavaux to be one of the strongest lieux-dits of Meursault, where the style often leans closer to a Premier Cru than to a classic village wine.

Vinification

The Chardonnay is harvested entirely by hand and carefully selected. After gentle pressing, fermentation takes place in French oak barrels, after which the wine ages on its fine lees for approximately twelve months. Through the restrained use of new oak, the freshness, minerality, and purity of the terroir are fully preserved.

Scent, taste and character

The wine opens with refined aromas of white peach, ripe pear, citrus, lime blossom, and white flowers. These are followed by subtle notes of roasted hazelnuts, brioche, butter, and wet limestone.

On the palate, this Meursault immediately reveals its heritage. The wine possesses the characteristic creaminess of Meursault, yet distinguishes itself through its lively acidity and pronounced mineral tension. Ripe stone fruit, citrus, and subtle wood notes are supported by a fine structure that gives the wine great length and elegance.

The finish is long, refined, and mineral, with notes of citrus, roasted nuts, and a light salinity that lingers for a long time.

Storage potential

Although the wine already possesses much charm when young, it will continue to develop over ten to fifteen years. With bottle aging, additional aromas of honey, roasted almonds, brioche, and flint emerge, while the fresh structure is preserved.

Drinking window and food and wine pairings

The 2020 Meursault Les Meix Chavaux is excellent to drink now, but develops beautifully between 2025 and 2038.

Preferably serve the wine at 11 to 12°C.

Perfect with lobster, scallops, turbot, monkfish, poultry with creamy sauces, veal, risotto with mushrooms or truffle, and aged cheeses such as Comté and Beaufort.
