The Château Pavie Decesse Saint-Émilion Grand Cru (Grand Cru Classé) has a perfumed nose of cherries, blueberries, cedar, toast, cloves and walnuts. Full bodied with a firm, beautiful structure of fine-grained tannins. Layered and elegant. Intense, powerful and spicy. Dark and intriguing, with a beautiful presence in the glass. Château Pavie Decesse is located in the Saint-Émilion region of Bordeaux, France. Classified as a Grand Cru Classé, this wine is an excellent representative of the exceptional quality and craftsmanship that characterizes this region. Château Pavie Decesse has a rich history dating back to the 19th century. The winery is located on the limestone plateau of Saint-Émilion, which provides a unique terroir that gives the wines their characteristic flavor and structure. The vineyard, originally part of the larger Château Pavie, was separated in the 1880s and has since operated as an independent entity. The Château Pavie Decesse vineyard covers approximately 3.5 hectares and is planted with old vines that are on average 45 years old. The dominant grape varieties are Merlot (90%) and Cabernet Franc (10%). This blend produces a rich, full-bodied wine with a deep, complex character. The vinification at Château Pavie Decesse is carried out with great care and precision. The grapes are hand-picked and carefully selected to use only the best quality. Fermentation takes place in temperature-controlled wooden and stainless steel vats, after which the wine is aged in 100% new oak barrels for 18 to 24 months.

From a small vineyard located on the limestone slopes above Pavie itself, the Perse family's 2019 Pavie Decesse exhibits aromas of ripe cherries, crème de cassis and fruit liqueurs mingled with notions of menthol, vanilla pod and cloves. Full-bodied, rich and extracted, it's thick and muscular, with lively acids and prodigious reserves of chewy tannin that assert themselves on the finish. While it is a touch toned down by comparison with the wines produced here a decade ago, it remains one of the inkiest, most extracted wines in Saint-Émilion. I tend to think that an even gentler vinification would bear dividends without sacrificing the concentration and intensity of flavor that can be taken for granted with a terroir of such quality and viticulture of such exigence.

The 2019 Pavie-Decesse is off the charts brilliant. Blueberry jam, graphite, menthol, licorice, espresso, lavender and cloves are some of the many nuances that unfold in a statuesque Saint-Émilion of dizzying scale. Big, brawny and powerful, the 2019 is going to require years in bottle to blossom, but it is immensely promising and very clearly a great wine in the making. Yields were just 17 hectoliters per hectare. Sadly, production is down about 40% because two parcels are being redeveloped. The use of only the healthiest parcels most likely explains why Pavie-Decesse is so exceptional in 2019. Henrique Da Costa, Gérard Perse's son-in-law, explained that while 2019 was hot and dry, conditions were not extremely hot. Cool temperatures in the evenings provided respite from the daytime heat, while water reserves in the soils from the wet spring allowed the vines to avoid stress. As for the wines, they are superb across the board. Most of the attention will naturally center on Pavie, but the entire range is terrific.

The 2019 Pavie-Decesse was cropped at a measly 17hl/ha on 5 October, the same day as Bellevue-Mondotte. It is the one cuvée from proprietor Gérard Perse that suggested a bit of sur-maturité, displaying prune and dates aromas, perhaps a few bunches here that could have been picked earlier? The palate is medium-bodied with ripe tannins, fleshy but nicely structured and no, there are no indications of excessive ripeness in the mouth. There is an attractive mineral vein embroidered on the finish and certainly a very persistent aftertaste with impressive salinity. If the bouquet can address that over-ripeness it will merit a higher appraisal.
