Description
Château Haut-Bailly has a distinct style that combines classic with modern, elegance, finesse and softness with structure. The smoothness of the tannins provides elegant and complex aromas. Château Haut-Bailly can be kept for many years, but it is already a wonderful wine to drink. This Château Haut-Bailly receives high praise from wine experts who agree that this Château Haut-Bailly offers complex enjoyment and a richness that is neither aggressive nor ostentatious. All these beautiful attributes that this wine has at its disposal mainly stem from the selection process of the grapes and the landscape and climate in which the grapes grow.
Soil experts have found that Haut Bailly has one of the finest terroirs in Pessac-Léognan. Great wines are created by the interplay between soil, location, climate and people. The wines have always been good, but have increased in quality even more in recent years. Haut-Bailly is known for its softness and silky texture. The wine has incredible potential for refined tannins and softly sweet, complex fruit nuances.
The 2019 Haut-Bailly settles into the glass with complex aromas of dark berries, laurel, loamy soil and cigars framed by a modest new oak. Full, velvety and elegantly muscled, powerful and concentrated, with lively acidity and an abundance of ripe yet youthful tannins. A wine that needs a few more years to get ready to drink, but it can also be stored in the cellar until 2070.

The 2019 Haut-Bailly unwinds in the glass with complex aromas of dark berries, bay leaf, loamy soil and cigar wrapper, framed by a discreet patina of new oak. Full-bodied, velvety and elegantly muscular, it's powerful and concentrated, with lively acids and an abundance of ripe but youthfully assertive structuring tannin that will demand some patience.
Haut-Bailly now boasts one of Bordeaux's grander new wineries, but the 2019 vintage at this address reminds us that the old facilities were more than capable of delivering excellence too! Winemaking here is rather gentle, with comparatively cool fermentation temperatures and a modest 50% new oak, yet the 2019s are rather structured, serious wines that will demand a bit of patience, reflecting a more classically proportioned, elegant style than the more flamboyant 2018. As usual, Cabernet Sauvignon represents slightly over half of the blend, including a block of ancient, more than 100-year-old vines in front of the château itself.

Composed of 56% Cabernet Sauvignon, 36% Merlot, 4% Cabernet Franc and 4% Petit Verdot, the 2019 Haut-Bailly was harvested from the 23rd of September to 11th of October. Deep garnet-purple colored, it leaps from the glass with vivacious notes of blackcurrant cordial, black raspberries and plum preserves with a tantalizing undercurrent of candied violets, dark chocolate, menthol and licorice plus a touch of Chinese five spice. Medium to full-bodied, the palate is achingly elegant, showing off perfumed black fruit layers with a firm frame of very fine-grained, silt-like tannins and seamless freshness, finishing with incredible persistence and fragrance. Just magic.

The 2019 Haut-Bailly had just been bottled prior to my visit. This is better than the 2018 with brilliant delineation on the nose and newfound purity. The palate is silky smooth with enormous depth, wonderful concentration and outstanding precision towards the finish with layers of lightly spiced black fruit. This is Fabulous with a capital "F". Tasted at the Haut-Bailly vertical at the château.

The vineyard is managed according to strict traditions and chemical herbicides are never used. Spraying is carefully limited, the soil is plowed and weeded with hoes, and the grapes are picked entirely by hand. The vinification takes place in a fermentation chamber with 26 thermo-regulated cement tanks of different sizes (ranging from 30 to 120 hectoliters). These specially adapted barrels ensure that the grapes, grown in different parts of the vineyard, are kept completely separate from the moment they are picked until the vinification.
The winemaking process takes place in cement tanks, while blending is done in stainless steel tanks - a great example of how tradition and modernity go hand in hand at Château Haut-Bailly. Alcoholic fermentation lasts eight to ten days and is followed by maceration. This process takes about three weeks during which the wine never overheats. In this way, a perfectly balanced wine is achieved.
