Château Canon is among Saint-Émilion's most prestigious Premier Grand Cru Classés. The estate boasts a rich history dating back to the 18th century and was named after Jacques Canon, the first owner to plant vines there. In modern times, Canon has undergone a true renaissance. After decades of relative inactivity, the estate was revived through replanting and rigorous viticultural work between 1996 and 2003. Since then, Canon has been led by a dedicated team, committed to prioritizing finesse and precision. Today, Château Canon is considered one of Saint-Émilion's flagship vineyards.
the terroir of saint-émilion
Canon's vineyards are situated on the renowned Saint-Émilion limestone plateau, which ensures excellent drainage and a constant supply of minerals. The soil consists of a solid limestone layer covered by a thin layer of clay ranging from 25 to 70 centimeters in depth. This homogeneous terroir gives the wines their characteristic tension, freshness, and mineral undertones. The vineyards comprise 22 hectares, primarily located on the plateau, with a few small plots in the city and near the neighboring Berliquet appellation. The current area is planted with approximately 70% Merlot and 30% Cabernet Franc.

The winemaking team works with great care in the vineyard, choosing cover crops and a sustainable approach to promote biodiversity. The plots are restructured through a combination of mass selection and carefully chosen clones. In the cellar, the emphasis is on finesse over raw power. Fermentation takes place in temperature-controlled vats, followed by aging in French oak barrels, approximately 50% of which are new. The tonneliers used include Taransaud, Demptos, Sylvain, and Quintessence. This approach produces wines that are rich and layered, yet always elegant and precise.

Wafting from the glass with aromas of mulberries and raspberries mingled with spices, rose petals, licorice and violets, the 2023 Canon is another brilliant wine from a property whose excellence can almost be taken for granted. Medium to full-bodied, deep and layered, it's seamless and concentrated, its vibrant core of fruit framed by sweet, powdery tannins and girdled by lively acids, concluding with a long, mineral finish.
As I've written before, Château Canon was once something of a sleeping giant, but today it has well and truly reawakened. Extensive replanting between 1996 and 2003, overseen by Nicolas Audebert's predecessor, John Kolasa, saw some 50% of the estate's 22 hectares replaced. The fact that these vines are now arriving at full maturity surely goes some way to accounting for Canon's contemporary renaissance. Now, the team is working on restructuring the rest, combining massal selections and clones. Viticulture is thoughtful, with cover crops across the estate, and the terroir itself is relatively homogeneous: solid limestone covered by some 0.25 to 0.7 meters of clay, with a more or less uniform exposition on Saint-Émilion's plateau. There's also one small parcel in the town itself and another by Berliquet. Today, the vineyard is planted with about 70% Merlot and 30% Cabernet Franc, and there are no plans to radically alter that. Winemaking privileges finesse over power, though a certain richness and texture can be taken for granted with a site like this, and maturation is in 50% new oak (mostly from Taransaud, Demptos, Sylvain and Quintessence). Today, the focus is on increasing precision and refinement, rather than revolution. And well it might be, for why change a winning team?

A wine of classicism and reserve, the 2023 Canon is less overtly expressive than most recent vintages, keeping much of its personality in reserve. Nevertheless, I watched it grow considerably over the two weeks I spent in Bordeaux. Bright red-toned fruit, blood orange, mint and spice are some of the many notes that open in the glass. It is a wine that marries generous fruit with classical rigor. I won't be surprised if it shows even better with time. Tasted four times.

The 2023 Canon was picked from around 6 September to 6 October at 45hL/ha and matured in 50% new oak. It has a perfumed bouquet with pure black cherries and touches of cassis and violet. The oak is beautifully integrated. Perhaps if I have to quibble, it is not quite as complex as the very best recent vintages, but that's a high bar nowadays. The palate is medium-bodied with sappy black cherry fruit laced with iodine, and veins of blue fruit. There is a sorbet-like freshness embroidered throughout this Canon, and it delivers a lovely cracked black pepper note on the finish. Excellent. Again.

Nicolas Audebert flits from Margaux to Saint-Émilion with Rauzan-Ségla and Canon/Berliquet under his charge. “The impact of the mildew was the same as at Rauzan-Ségla. However, the location of the vineyard on the top of the hill makes it more exposed to the wind, plus the drainage of the soil meant that the mildew was not quite as severe. Consequently, yields at Canon are higher.”

This 34ha Cru belongs to the Wertheimer family, just like Ch Rauzan Ségla in Margaux. This family also owns the fashion house Chanel. Currently, it is director John Kolosa and the young cellar master Stéphane Bonnasse who improve the quality year after year.
In 2011 the property was increased by 12.5ha thanks to the purchase of the neighbor Ch Matras, this vineyard was integrated into the second wine "Clos Canon". The terroir of Ch Canon is located at the very top of St Emilion on the limestone plateau and produces a concentrated yet elegant, delicate wine that is on par with the greatest St Emilions in terms of quality! Organic products are used here to treat diseases, but without the wine being certified organic.
