Description
The mild winter of 2012 came into its own in February, with freezing temperatures of -10 and even -20 degrees Celsius. Soft buds started to appear in March, but in April heavy rain showers followed with clear and therefore freezing nights. A cold snap during flowering didn't help, without even a ray of sunshine in sight. Finally August had arrived, the warmest month on the calendar, but the first days were a bit too warm. The vines had been through everything, but what would the harvest bring? It started on September 17 in Le Mesnil. Mother Nature loves to play tricks. A miracle took place in the barrels, a great wine emerged. This vintage had everything. Sugars, fine acidity and wonderful potential… All that's left to do now is wait. And see the winegrowers smiling again.

Back in 2014, Salon's president Didier Depond was quoted in the press as saying that “since 2008, there has been no genuinely great vintage in Champagne" and that a 2012 from Salon wouldn't be released. But the just-released 2012 Brut Blanc de Blancs Le Mesnil shows that he had good reason to change his mind, as to my palate this is, after the 2008, the finest Salon produced this millennium. Unwinding in the glass with notes of citrus oil, wet stones, freshly baked bread, white currants and oyster shell, it's full-bodied, deep and concentrated, with a tightly wound core of fruit, racy acids and an elegant pinpoint mousse. Concluding with a long and resonant finish, this is a structured and powerful Salon that's a lot more incisive than, for example, the 2002 at the same stage, but which also carries more muscle and substance than a leaner vintage such as 2007. For readers that have balked at the pricing of the magnum-only 2008, the 2012 isn't far off the latter's level in quality, and will presumably be distributed more conventionally.

Gorgeous aromas of cooked apple, bread dough and pie crust. Hints of lemon curd, flint and match stick, too. Full-bodied and dense with agility and beauty, particularly in the center-palate that just lifts at the end. So much density and structure, yet it always remains floating and aerial. Phenolic and integrated at the end. Impressive structure and length. Very drinkable now, but gives the sensation that it will be better in three or four years.

The 2012 Salon is absolutely gorgeous. It offers a beguiling mix of radiance and energy that seems to capture a little bit of elements of some of its older siblings. The expression of fruit is radiant and quite overt, but without reaching the tropical exuberance of the 2006. In shape, the 2012 recalls the mid-weight style of 2007 with the freshness of 2008, but not quite the youthful austerity of that wine. If that sounds like an appealing combination, well it is. The 2012 Salon is all harmony and class.

The intention of Aimé Eugène Salon was to create a mythical wine from the beginning: one vintage, one plot, one cru and one grape from one village, namely Mesnil-sur-Oger. Only 37 millésimés were made in the 20th century. Five Millésimés have been created in the 21st century. Only the years 2002, 2004, 2006, 2007 and the grandiose 2008 were worth being released on.
History of Salon
Salon is a Champagne producer based in the village of Le Mesnil-sur-Oger (Côte des Blancs, Champagne, France). It is known for producing some of the world's most exclusive and sought-after Champagnes. Founded in 1911 by Eugène-Aimé Salon, the house has a very distinctive focus on producing exceptional Blanc de Blancs Champagnes of one vintage, made exclusively from Chardonnay. Champagne Salon is the sister house of Delamotte, located a little further away. Both houses have the same director Didier Depond and cellar master Michel Fauconnet. In the 1920s and 1930s, this was the personal Champagne of the extremely wealthy Monsieur Salon. The Champagne was only served at his home, or in the Parisian eatery Maxim's, where he frequented.
Philosophy and production of Salon
Champagne enthusiast Aimé Salon initially created Champagne Salon just for himself and his closest friends. The grape variety he was going to use was only Chardonnay, from the Grand Cru Le Mesnil-Sur-Oger. The Vinification of course is the Méthode traditionnelle. The Salon does not undergo malolactic fermentation, remains on the lees for a very long time and receives a very small dosage. Salon has enormous maturing potential and is therefore an ideal champagne to keep and can mature for up to 40 years. Due to its limited production and high quality, Salon Champagne is usually quite expensive and difficult to find. It has built a reputation as a symbol of luxury and excellence in the world of Champagne, and is a preferred choice for special occasions and celebrations among those who appreciate the finest wines.
