Bibi Graetz Winery

Bibi Graetz, based in Florence, works with old vineyards in high-altitude plots in Tuscany. He focuses on native grape varieties and selects fruit from very old vines to create wines with finesse, energy, and terroir expression. His flagship Cuvée Colore is among Italy's most sought-after wines and is produced exclusively in vintages that meet his high quality standards. 2012 Bibi Graetz Colore Year of Dragon Edition

The 2012 Colore is a special Year of Dragon Edition of this iconic Tuscan blend, produced in limited numbers.

Origin and composition

Colore is an equal blend of Sangiovese, Canaiolo, and Colorino. The fruit comes from three historic vineyards with old vines: Lamole in Chianti Classico, Vincigliata, and Siena. In 2012, the berries were relatively large for Sangiovese, contributing elegance and refinement to a warm and powerful vintage. Only 5,000 bottles were produced.

2012 was warm and generous in Tuscany. The year's natural richness is tempered by selection and precision, keeping the wine compact and controlled. The texture is slightly leaner than in some other warm vintages, creating tension and balance.

Color, smell and taste

Deep ruby red with a slight evolution at the rim. The nose reveals notes of wild berries and dried cherries, complemented by roasted spices and a distinct mineral undertone. The palate is powerful yet refined, with a compact core of red fruit and an elegant structure. The tannins are present yet well-integrated, and the finish shows length and a subtle spicy complexity.

Structure and storage potential

This 2012 combines ripeness with finesse and has ageing potential until around 2035. The wine develops towards more tertiary aromas while retaining its fresh core.

The Bibi Greatz winery was founded in 2000 in the town of Fiesole in Tuscany. Bibi Graetz is considered one of the most talented winemakers in Tuscany. His father is Israeli and his mother Norwegian, but he was born and raised in Florence. He lives in part of the beautiful old castle with his Norwegian wife and 4 children.

Bibi comes from a family of artists, until he himself decided to take a different path and left the winemaker profession behind. He bought an 8 hectare vineyard with 60 year old vines. Today Graetz is one of the biggest names in Tuscany. The labels on the bottles show that Bibi Graetz comes from an artistic family, as he painted the images on the labels himself. The wines are rare and limited. Testamatta production from just 10,000 bottles per year.
