Description
2000 Château Giscours Margaux
The 2000 Château Giscours is a Margaux of exceptional quality. This Premier Grand Cru Classé, the third level in the Margaux classification, demonstrates how a Bordeaux can preserve and age a great vintage. Château Giscours is known for wines with balance, finesse, and a soft structure, and this bottle from 2000 is a prime example. Wine of this age remains exciting because it is a natural product: how it will develop in the coming years is never entirely predictable. Each bottle is unique and can reveal subtle differences in aroma and flavor, making tasting it a constant surprise.
the Château Giscours winery
Château Giscours is located in Margaux, one of the Médoc's most prestigious appellations. The estate has a rich history dating back to the 14th century and covers approximately 80 hectares of vineyards. The soils are predominantly gravel and sand, perfect for the classic Merlot and Cabernet Sauvignon that make up the majority of the plantings. The estate is known for wines that are elegant, refined, and long-lasting.
The estate combines modern winemaking techniques with respect for the environment. By working sustainably, the terroir's expression is preserved. This means that each bottle reflects both the year and the specific conditions of the vineyard. The 2000 vintage demonstrates how a well-stored Margaux can age and develop slowly in the bottle, while no one can predict exactly how it will behave in ten years.
tasting of 2000 Château Giscours
Upon opening the bottle, the first thing you notice is its bright ruby red color. The nose is rich and complex: ripe black fruit like cassis and plums, with hints of tobacco, cedar, and a light touch of chocolate. After some aeration, subtle aromas of earthy notes and spices emerge. The palate is round and supple, with soft, well-integrated tannins and an elegant finish. Thanks to its age, there's a refinement less often found in younger Bordeaux, but it always remains a natural product, allowing each bottle to reveal its own unique evolution.
wine and food pairings
The 2000 Château Giscours pairs well with dishes that complement its structure and finesse. It's perfect with slow-cooked beef, rack of lamb, or game dishes with rich sauces. It also pairs well with hard, aged cheeses. Because the wine is both powerful and elegant, it remains surprisingly versatile at the table. Small nuances in flavor and aroma make every bite a new experience.
wine as a natural product
A bottle like this is a natural product: the grapes are influenced by the weather, the soil, and the circumstances of the year. This means that even within a single vintage, each bottle can have its own unique character. A wine over twenty years old remains exciting: how it will develop is never entirely predictable. The pleasure lies in discovering these subtle changes and experiencing the unique character that time and nature create together.
maturation and storage
This 2000 Margaux has been aged for over twenty years and can still age well if stored properly. At Grand Cru Wines, the wine is stored in a climate-controlled Wine Warehouse, where the temperature and humidity are optimal for long-term storage. This keeps the bottle in top condition and allows it to be opened at the right time. For those who want to drink it immediately, decanting it slowly is recommended to allow the aromas to fully develop.

Tasted at the Château Giscours vertical, the 2000 Château Giscours is a blend of 55% Cabernet Sauvignon, 40% Merlot and 5% Cabernet Franc picked between September 25 and October 7. The bouquet is clearly in a different league to the previous two vintages: red plum, mulberry and cedar aromas that generously waft from the glass. There is something a little more exotic about these aromatics, with hints of stewed apricots in the background. The palate is medium-bodied with fine tannin and cedar-infused black fruit with hints of black truffle towards the finish. Perhaps I was a little over-enthusiastic when I last tasted this millennial Margaux, and it seems to lose energy observing it over a ten-minute period, hence my docking a couple of points. Tasted June 2015.

This is very perfumed, with mushrooms, berries, and even strawberries. Full and round on the palate with soft tannins and lovely sweet finish. This is very long and balanced, but still needs time. Just starting to open up now, but give it a couple of years. Pull the cork in 2012.

From: Balloons, Mermaids & Margaux: Château Giscours 1938-2023 (Apr 2025)
The 2000 Giscours is consistent with the bottle that I tasted in 2021—still those red plum and cedar scents, and a hint of black olive compote, decently delineated. Nicely balanced, the palate is medium-bodied with grainy tannins. It's lightly spiced with a touch of balsamic towards the finish. This is not a bad millennial, but it's missing a little grace.

From: Looking Backward/Looking Forward: 2000 vs 2001 Bordeaux (Sep 2021)
The 2000 Giscours is a vintage that I last tasted at the 20th-anniversary vertical in 2015. It has a lovely nose, not powerful, but pure and less rustic than some of the others tasted, offering red plum and cedar (as I have noted on previous bottles) and hints of fig jam and black olive. The palate is medium-bodied with grainy tannins and just a splash of balsamic infusing the red fruit. It lacks a little length and feels a bit compact on the finish, but there is ample freshness and tension. Decanting would benefit this millennial. Fine.

(55% cabernet sauvignon and 45% merlot; 31 g/l dry extract; 13.4% alcohol): Good full ruby-red. Perfumed aromas of cassis, violet, shoe polish, tar and smoke. Sweet, ripe and luscious, with earthy underbrush and blackberry flavors lingering impressively on the aftertaste. A very fleshy, ripe Giscours that remains precise and light on its feet thanks to harmonious acidity. Lovely wine.
