De wijngaard en wijnmakerij bevinden zich op ruim 600 meter hoogte nabij de top van Spring Mountain in de westelijke heuvels van de Napa Valley. Philip kwam in 1975 aan op Spring Mountain en is begonnen met het (her)planten van de wijngaard in 1981, hoewel hier aan het einde van de 19e eeuw voor het eerst al wijnstokken werden geplant. De oudste wijnstokken zijn nu van 1985 en onze jongste werden geplant in 1997. De tien hectare grote wijngaard is beplant met Cabernet Sauvignon, Merlot, Cabernet Franc en Petit Verd en ze bewerken onze wijngaard zelf met behulp van biologische methoden.
Er zijn drie eigenaren, Birgitta en Philip Togni, samen met hun dochter Lisa. Philip is een voormalig student van Emile Peynaud aan de Universiteit van Bordeaux, waar hij vele jaren geleden het Diplôme National d'Oenologie behaalde terwijl hij werkte als assistent-regisseur bij Château Lascombes. Philip kwam in 1959 naar de Napa Valley. Lisa heeft een achtergrond in de wijnhandel en heeft geoogst in Australië en op Château Léoville-Barton in Bordeaux dus het zult u niet verbazen dat de wijnen van Philip Togni heel Bordeaux aandoend zijn. Alle wijnen zijn Estate Bottled, wat betekent dat ze alleen druiven gebruiken die we zelf verbouwen.
De Philip Togni Vineyard Cabernet is een Margaux-type blend van voornamelijk Cabernet Sauvignon, met Merlot, Cabernet franc en Petit Verdot. De Cabernet Sauvignon Estate 2019 is een klassieke Togni-wijn, bedoeld om minstens tien jaar te bewaren en daarna nog 30+ jaar goed te kunnen rijpen in een koele kelder. Hints van groene olijf en tijm voegen een hartige nuance toe aan de frambozen- en kers op de neus, terwijl het medium tot volle gehemelte geconcentreerd is in een dichte, gestroomlijnde vorm die golven van stoffige tannines afwerpt, gebufferd door hints van ceder en vanille met aanhoudende cassis tonen in de afdronk. Dit is een icoon welke niet mag ontbreken in een mooie wijn-collectie.
WEETJE: Elk jaar houden ze een deel van de nieuw gebottelde wijn achter om opnieuw uit te brengen wanneer deze tien, twintig en dertig jaar oud is een wist u dat u een leuke korting krijgt als u kiest voor afhalen in ons Wine Warehouse!

Possibly the best wine produced here since the terrific 2001 or 1991, Togni's 2021 Cabernet Sauvignon Estate comes across as rather cool and fresh, with gentle grace notes of mountain sage lending nuance to the predominantly red-berried fruit, tinged with cassis, mint and cedar. It's medium to full-bodied, concentrated and firm, with silky tannins and refreshing acids providing ample structure and amplifying the lingering, elegant finish.
My visit to this Spring Mountain outpost almost didn't happen. Torrential rains blew through the night before, downing numerous trees and cutting power to big swathes of Napa Valley. Fortunately, by the time I headed up the mountain, most of the trees across the road had been cleared. The one exception I was able to squeeze under in my low-slung Toyota Prius rental. The winery was without electricity, but after a short talk about the 7.5 inches of rain that he said had fallen over the previous 24 hours, 97-year-old Philip Togni fired up the generator and we went down to the cellar to taste.
Togni has 10.5 acres of vines on the slopes of Spring Mountain, with the oldest current vines planted in 1985. In principle, the vines are dry farmed, but Togni confesses that he might use water at times just to hold the sugar levels back if he feels like they're racing ahead of tannin ripeness. Tanbark Hill now accounts for about one-third of the production; it's 100% Cabernet Sauvignon, while the estate bottling typically includes small proportions of Merlot, Cabernet Franc and Petit Verdot. The wines have been unfiltered and unfined since 1988.
The 2021s are the current release, but the 2022s won't be far behind (usually offered in February), as the wines are normally bottled in late June or early July. And not to be missed for folks who haven't been long-time collectors is Togni's library release, typically 10 and 20 years after the vintage. The 2014 was showing very well, as the wines often do after 10 or more years of cellaring.

The 2021 Cabernet Sauvignon Estate is an outrageously beautiful wine and also one of the wines of the year. A soaring, exotic bouquet makes a strong opening statement. Pliant and creamy, with mind-blowing textural finesse, the 2021 dazzles from start to finish. Hard candy, mint, lavender, Kirsch and spice linger on the close. The 2021 possesses mind-blowing purity and exceptional finesse.

It’s always a pleasure to stop by and taste with Philip, Birgitta and Lisa Togni at this small estate vineyard on Spring Mountain. This year’s releases are superb. The flagship Cabernet Sauvignon is one of the finest in recent memory, while the Tanbark Hill benefits from a bit of fruit that could not be used for the main label because the tanks for that wine were full. The Togni Cabernets embody the essence of old-school classicism in Napa Valley. Earlier this year we hosted a vertical of the wines back to 1983, which was a great opportunity to be reminded of how well these wines age.
