Khorasan wheat takes its name from the ancient Persian region of Khorasan. The stem is over one and a half meters high and the ear is up to 15 cm long. The grain of Khorasan wheat is about twice that of conventional wheat. Khorasan is the predecessor of durum wheat, it is an ancient grain with a high protein content, which was cultivated in Egypt 6,000 years ago. Their open ends allow them to scoop up the sauce perfectly and hold it between the grooves in their surface.
